
Cake:
9 oz strawberries, fresh or frozen
2 ½ cups almond flour
¾ cup sugar
¾ cup corn starch
1 Tbsp baking powder
1 tsp vanilla extract
¼ tsp salt
Topping:
½ pound rhubarb, fresh or frozen
1/3 cup brown sugar
Preheat the oven to 350° F. Grease or line an 8 inch cake pan with parchment paper.
Purree the strawberries in a blender until smooth.
In a medium bowl, combine strawberries with the rest of the cake ingredients. Stir until mostly combined, then use an egg beater to blend it together.
Scoop the cake batter into your cake pan and smooth the top.
Bake the cake for 30-35 minutes or until you can insert a skewer or toothpick in the middle and it comes out clean. Allow the cake to cool in the cake pan.
While the cake is baking, chop the rhubarb into small pieces. Combine with the brown sugar in a small pot and cook over medium heat until it simmers, the rhubarb is soft, and the sugar is syrupy. If using frozen rhubarb, cook it enough to soften it before adding the sugar. The rhubarb should become mush.
Remove from heat and let cool. Once it is cool enough to handle, purree the mixture in the blender until totally smooth.
Spread the topping over the cake.

1 ½ lbs rhubarb, chopped into ½ in pieces

1 Tbsp butter
1 Tbsp cornstarch
For the crumble topping:
1 ½ cup flour
6 Tbsp butter, cold and diced
3 Tbsp brown sugar
Preheat the oven to 375° F.
Heat the rhubarb in a pan on medium to medium low with the honey, 1 Tbsp butter, and cornstarch for about 5 minutes, until the rhubarb is glossy and everything has melted together. Transfer to an 8 ½” pie tin or square baking dish.
To make the crumble topping, place the flour and brown sugar in a bowl and rub in the butter until it is thoroughly combined, with a texture like soft crumbs.
Spread evenly over the fruit. Bake 35-45 minutes.

¼ tsp ground nutmeg
1 cup flour
2 Tbsp brown sugar
pinch of salt
¼ cup butter
Preheat oven to 350° F.
Combine the rhubarb, apple, maple syrup and nutmeg. Pour into a 8” baking pan or pie tin.
Stir together the flour, brown sugar, and salt. Cut in the butter until it is all crumby. Sprinkle evenly over the fruit.
Bake for 45-55 minutes.

¼ cup butter
For the filling:

Heat oven to 375° F.
In a mixing bowl, combine flour, baking powder, brown sugar and ginger. Cut in the butter until the texture is crumbly. Refrigerate until needed.
Toss rhubarb, strawberries, honey, cornstarch and salt in a 9” deep-dish pie plate.
Remove topping from refrigerator and cover fruit thickly and evenly with topping. Place pie plate on a baking sheet, and bake until crumble topping is golden brown in places and fruit is bubbling beneath, about 40-50 minutes.

2 ½ lb rhubarb
8 cups water
½ cup honey
Cut rhubarb into 1” pieces. Cook in hot water until soft (not boiling). Strain out the rhubarb pieces. Stir in the honey. Chill.
You can add more honey to taste. I found that ½ cup was sufficient, as it sweetened it without overwhelming the rhubarb with honey flavor. However, you can add more honey if you want.
The rhubarb can be used again in recipes that call for cooked rhubarb. I made mine into a crumble, but it was more mushy than it would have been normally because it had already been cooked. A simple dessert is to stir honey or sugar and cinnamon into the rhubarb.

4 cups chopped fruit
Preheat oven to 350° F. Melt the butter in a 9”×13” pan in the oven.
Mix together the flour, sugar, baking powder, milk, apple sauce, and salt.
Pour half of the batter into the pan with the melted butter. Pour the fruit over the top in an even layer. Spread the rest of the batter over the top.
Bake for 45-60 minutes or until crust is golden.
Use any kind of fruit you like!
For gluten-free, replace 2 cups flour with 1 cup almond meal and 1 cup gluten-free flour mix.
