Wheat and Honey

buttermilk

2 ½ cups flour 2 Tbsp sugar 1 Tbsp baking powder 1 tsp salt ½ cup butter 3 eggs 2/3 cup buttermilk 2/3 cup grated sharp cheddar ¼ cup chopped chives ¼ cup grated sharp cheddar (to top scones)

Preheat oven to 375° F.

In a large bowl, whisk together the flour, sugar, baking powder and salt. Cut the butter into the flour with a pastry cutter. Stir in the cheddar and chives.

Whisk 2 eggs and combine with the buttermilk. Add to the flour mixture and stir until just moist.

Turn the dough out onto a well floured surface and knead lightly. Cut dough in half. Roll each half into a circle about ¾” thick. Cut each circle into 4 wedges. Whisk remaining egg in a small dish and brush on top of the scones.

Let the scones rest for about 10 minutes before baking. Sprinkle each scone with about a Tbsp of grated cheddar.

Bake for 20 minutes or until golden brown on the edges.

¾ cup buttermilk ¼ cup coconut oil or butter 1 cup blueberries, fresh or frozen 1 tsp vanilla extract 3 eggs ¼ cup brown sugar ¼ cup white sugar ½ tsp salt 2 cups flour 2 Tbsp corn starch ½ Tbsp baking soda

Preheat oven to 400° F, and spray a muffin tin with non-stick spray, or use paper liners.

In a blender, combine the buttermilk, butter/oil, blueberries, vanilla extract, eggs, and brown sugar. Blend until mostly smooth.

In a medium mixing bowl, mix together the white sugar, flour, baking soda, and corn starch. Add the liquid mixture, beating on low-medium speed, until it is thoroughly mixed.

Fill the muffin tin. Bake for 12-15 minutes.

Cake:

1 cup butter, softened 2 cups sugar ¾ cup buttermilk 1/3 cup lime juice 5 eggs 3 cups flour 1 ½ tsp salt ½ tsp baking powder ½ tsp baking soda

Preheat oven to 350° F. Line bottoms of 2 cake tins with parchment, and grease the sides of the tins.

In a small bowl, combine buttermilk and lime juice. Set aside.

In a large bowl, cream together the butter and sugar until fluffy. Add the eggs one at a time, beating in each egg completely before adding the next one.

In another bowl, combine flour, salt, baking powder, and baking soda. Stir 1/3 of the flour mixture into the egg mixture. Then stir in ½ of the buttermilk mixture, then flour again, buttermilk again, and flour again. Do not overmix.

Spoon batter into prepared pans. Bake 30-35 minutes, testing with a toothpick for doneness.

After removing from oven, let the cake rest in the pans for 15 minutes before inverting onto a rack to cool completely.

Filling:

6 Tbsp cream cheese ¼ cup softened butter ½ tsp vanilla extract ½ tsp fresh, grated lime zest ¼ cup honey

Beat together all filling ingredients until fluffy. Keep chilled until time to use.

When the cake is totally cooled, smooth the filling onto one of the cake layers. Place the other layer on top.

Frosting:

½ cup sugar ¼ cup honey 2 Tbsp water 1 tsp fresh, grated lime zest 2 egg whites at room temperature

Mix the sugar, honey, water, and lime zest in a saucepan. Heat to a rolling boil over medium heat. Keep boiling until it reaches 242° F on a candy thermometer.

In a large bowl, beat egg whites until stiff peaks form. Pour the boiling syrup slowly in a thin stream into the egg whites, beating constantly on medium speed. Then beat on high speed until stiff peaks form.

Spread the frosting over the top and sides of the cake.

2 cups flour ½ tsp salt 1 tsp baking powder ¾ cup grated carrot ¾ cup grated turnip 1 cup buttermilk

Preheat a skillet over medium-low heat.

Stir together the flour, salt, and baking powder. Stir in the grated vegetables until they are well mixed and coated in the flour. Stir the buttermilk in to make a dough.

On a floured surface, quickly knead the dough to make it coherent. Divide into 2 pieces and roll each piece into a circle about ½” thick. Cut into quarters. Cook the pieces for 6-8 minutes on each side, until golden brown.

Chicken: Needs to be thawed. Doesn't have to be room temperature, but can't be frozen. Cut out any bones. Cut or pound the meat so it is no more than ¾” thick.

First dredge: Flour and/or cornmeal.

Second dredge: Buttermilk, or milk with some acid added. Generally vinegar, but you can amp the flavor by adding salsa, steak sauce, or whatever.

Third dredge: Mostly bread crumbs. Panko for most crunch, but any kind will work. Add lots of salt, pepper, and seasonings. (paprika, rosemary, onion powder, garlic powder, cumin, what you want)

Frying: I use plain canola oil. Type of oil doesn't necessarily matter as long as it can get hot. Use at least ½” of oil. Put it over high heat in a frying pan. Once it gets hot, turn the heat to medium.

Process: Use tongs to handle everything.

First, coat the chicken piece with flour/cornmeal. Then dip it quickly into the milk. Then put it in the breadcrumb mixture, coat it & press the crumbs onto it.

Put the chicken directly into the hot oil. Let it fry, without moving it, for several minutes until the bottom is deep golden brown. Then flip it and fry the other side the same.

Don't have more than 2 or 3 pieces frying at a time so they have space & a more stable temperature.

When you take out the chicken, put the pieces on a cooling rack atop a baking sheet. Extra oil will drip off, and the chicken will cool without getting soggy.

1 ½ cup flour ½ cup almond meal 1 tsp baking powder ½ tsp salt ¼ cup butter 1 egg ½ cup gooseberry jam ½ cup buttermilk Spiced sugar

Preheat oven to 375° F.

Stir together the flour, almond meal, salt, and baking powder.

Cut in the butter until it is thoroughly mixed, no chunks of butter.

Stir in the buttermilk, egg, and jam. It will be a very soft and wet dough. Turn it out onto a floured counter and knead it, very gently, adding in enough flour to make the dough cohesive. Roll it out to about ½”-¾” thick and cut out rounds.

Sprinkle spiced sugar on the top of each round, place them on a baking sheet lined with baking parchment, and bake for 15-20 minutes until they are golden brown.

Variations:

Obviously, use whatever jam you like.

2 cups whole wheat flour 1 Tbsp baking powder 1 tsp salt ½ cup butter ½ cup buttermilk 2 eggs

Preheat oven to 425° F.

Stir together the flour, baking powder, and salt.

Beat together the milk and 1 ½ eggs (or 1 extra large egg). (Start with 1 egg and the milk, then beat the second egg separately and add half of it to the milk.)

Roughly cut the butter into the flour mix, leaving some largish chunks of butter. Stir in the milk mixture until just mixed.

Gently knead the dough on a floured surface until it holds together. Gently shape into a large, flat rectangle. Fold the rectangle into thirds (like folding a letter) and gently press down. Cut into 8 equal pieces, or however many biscuits you want. You can leave them in this shape, or gently reshape them by tucking the edges.

Place on a baking sheet that is greased, or lined with parchment. Use the remaining beaten egg to glaze the tops. Sprinkle seasonings on top if desired. Bake for 15-20 minutes.

Preheat oven to 375° F.

Combine flour, baking powder, and salt, in a large bowl, stirring with a whisk. Cut in butter until the mixture resembles coarse meal. Add milk, jam, and egg, stirring just until moist.

Place dough onto a floured surface and knead lightly until the dough is all together. Place on a baking sheet that is either greased, or lined with parchment. Form dough into an approximately ¾” thick, 9” circle. Cut dough into wedges all the way through.

Sprinkle spiced sugar on top. Bake until golden and firm in the middle, 20-30 minutes. Serve warm.

Place dough onto a floured surface and knead lightly until the dough is all together. Place on a baking sheet that is either greased, or lined with parchment. Form dough into an approximately ¾” thick, 9” circle. Cut dough into 12 wedges all the way through.

Sprinkle cardamom and sugar on top. Bake until golden, 18-20 minutes. Serve warm.

¼ cup corn starch ¼ cup chopped raw nuts 2 cups milk, cream, buttermilk, or nut milk 1 ½ cups chopped apples 1 ½ cups chopped pear ¼ c honey ½ tsp cinnamon 1/8 tsp ginger pinch of ground cloves pinch of salt pinch of nutmeg

Mix the corn starch, nuts, milk, apples, pears, and honey in saucepan and bring slowly to a simmer. Cook, stirring for 5-8 minutes. Remove from heat and stir in cinnamon, cloves, nutmeg and salt. Can be served warm or chilled.
