Wheat and Honey

cinnamon

1 ½ cups sugar ½ cup butter ½ cup coconut oil or shortening 2 eggs 2 ¾ cups flour 2 tsp cream of tartar 1 tsp baking soda ¼ tsp salt ¼ cup sugar 2 tsp ground cinnamon

Preheat oven to 400° F.

Chop the butter into small cubes and combine with 1 ½ cups sugar, coconut oil/shortening, and eggs in large bowl. Use an egg beater to cream the ingredients together.

Add flour, cream of tartar, baking soda, and salt, stirring until it forms a dough that sticks together. It may take a few minutes to mix in the chunks of butter.

In a small bowl, stir together the ¼ cup sugar and cinnamon.

Shape dough into small balls. Roll balls in cinnamon-sugar mixture. Place 2 inches apart on a cookie sheet lined with baking parchment.

Bake 8-10 minutes or until set. It is ok if they don't look completely baked. They will repose on the hot sheet and will stay soft instead of getting dry and crispy from baking longer. Place the cookie sheet on a wire rack to cool.

4 cups (12 oz) fresh cranberries 1 cup raisins, dried cranberries, or similar dried berries ½ cup sugar ¾ cup brown sugar 2 tsp ground cinnamon ½ tsp ground ginger ¼ tsp ground cloves ¼ tsp salt ¼ tsp ground black pepper 1 cup water, vegetable stock, or orange juice ½ cup minced onion ½ cup minced Granny Smith apple ½ cup minced celery

In a medium pot, combine the cranberries, dried fruit, sugar, brown sugar, cinnamon, ginger, cloves, salt, pepper, and water/stock/orange juice. Bring to a boil over medium-high heat, then reduce the heat and simmer over low heat until the berries start to pop, about 5-7 minutes.

Add the onion, apple, and celery. Stir occasionally until the mixture thickens, 5-10 more minutes. Remove from heat.

For best flavor, refrigerate it overnight.

2 cups flour 2 tsp baking powder ½ cup nut flour ½ tsp ground cinnamon ½ tsp ground nutmeg or mace 1-2 oranges or clementines or tangerines 12 Tbsp butter 1 cup sugar 2 eggs 1 cup plain yogurt 3 Tbsp melted butter 1/3 cup brown sugar 1 ¼ cup grated apple

Preheat the oven to 350° F.

In a medium bowl, stir together the flour, baking powder, nut flour, cinnamon, and nutmeg/mace.

Peel the oranges and manually remove the pith and seeds. Blend the orange flesh in a food processor to create a thick pulp, it doesn't have to be totally liquefied. You need to get 2/3 cup of orange pulp.

In a large bowl, cut the butter into the sugar, then beat them until they are creamed together. One ingredient at a time, beat in the eggs, yogurt, and orange pulp.

Spray the bottom and sides of a large cake pan. In the bottom of the pan, spread the melted butter, then evenly sprinkle the brown sugar, then evenly spread the grated apple.

Gently stir the dry ingredients into the wet ingredients. Spread the batter evenly over the apples. Bake for 45-55 minutes or until the cake tests done.

Let the cake cool until it has shrunk away from the edges of the pan, then turn out up-side down onto a serving tray.

4 eggs ¼ cup milk ½ tsp ground cinnamon 1 tsp ground nutmeg ¼ tsp vanilla extract 6 slices of bread Butter

Preheat skillet and melt a thin layer of butter in it. Beat the eggs, milk, cinnamon, nutmeg, and vanilla extract until the mixture is light and homogenous. You can use an egg beater if you want to truly blend in the spices, but a manual whisk is sufficient.

Set the stove heat to medium. Dip pieces of bread into egg mixture, coating both sides. Cook on each side until browned. Add more butter to skillet between batches.

Serve warm with syrup, jam, honey, or any desired topping.

2 cups flour ¼ cup sugar ¼ cup brown sugar ½ tsp salt ½ Tbsp baking soda 1 cup milk, water, or nut milk ½ cup butter or coconut oil 1 egg 1 Tbsp lemon juice 1 tsp vanilla or orange extract (optional)

Preheat oven to 450° F. Grease a muffin tin, or put in paper baking cups.

Stir together the flour, sugars, salt, and baking soda.

In a small bowl, melt the butter/coconut oil. Add the milk/water/nut milk, egg, lemon juice, and vanilla/orange extract. Whisk until completely combined.

Pour the liquid into the flour mixture, stirring until just combined. Divide evenly into the muffin cups, about ¼ cup each.

Bake for 5 minutes, then reduce the heat to 400° F and bake for 10-12 minutes, until a tester comes out clean.

4 cups flour 1 ¾ cups warm water or milk 1 Tbs. salt 2 tsp dry yeast or .6-.7 oz fresh yeast 2 tsp sugar

Mix-ins: peanut butter jam/jelly cheese marinara sauce, with or without cheese, minced pepperoni, etc poppy seeds and lemon zest dill weed and grated carrot any kind of herbs, edible flowers tiny bits of caramel cheese with minced vegetables like peppers, garlic, etc honey cinnamon and sugar dried fruit Use your imagination!

Combine the yeast with the sugar in warm water/milk. Stir in the flour one cup at a time, adding in the salt with the last cup of flour. Knead so that it's smooth and elastic with some resistance.

Coat bowl and dough in oil or water. Place dough in the bowl and cover with plastic wrap sealed around the edges, but large and loose over the top so it doesn't smash the risen dough. Let rise for 1 hour, or until doubled, in a warm place.

Divide dough into a lot of small portions. Add a different mix-in into each piece, adding flour if necessary to anything that is too wet. Some fillings can be kneaded into the dough. For some fillings, roll the piece of dough flat, put on the filling, and roll it into a log with the filling spiraled inside. Others can be made into little filled dumplings. Coat the outside of the pieces with water so they will adhere together. Put the pieces of dough all together in a greased bread pan, coat the top with oil, cover loosely with plastic wrap, and let rise again for another 30 minutes or so, until it is about an inch over the top of the pan.

Spray water into the oven or place a small pan with water inside. Put the bread pan into the oven, then start pre-heating to 350° F. Bake for 60-70 minutes until it's a dark golden brown on top and the interior measures to 190°-200° F.

Crust: 2 cups semola flour ½ tsp salt ½ tsp dried rosemary ½ tsp dried dill weed ¾ cup butter ½ cup cold water

Filling: ½ lb ground pork 1/3 lb ground chicken 1/3 lb ground lamb 1 cup chopped onion 1 ½ cup grated turnip ½ tsp crushed garlic ½ tsp salt ¼ tsp celery seed ¼ tsp ground clove 1/8 tsp ground cinnamon 1/8 tsp ground nutmeg

For the crust: Stir together the semola flour, salt, rosemary, and dill weed. Cut the butter into small chunks, then cut it into the flour mixture until the mixture becomes a crumbly paste. Drizzle and stir in the water. Press it together to form a dough, then divide into 2 balls. Press each ball into a thick disk, wrap them in plastic wrap, and put in the fridge to chill.

Combine all the filling ingredients in a large pot over medium-high heat. Cook, stirring occasionally, until the meat is cooked, then remove from heat.

Bring out the crust dough. Lay out a large sheet of plastic wrap, put one unwrapped disk of dough on it, then cover with another sheet of plastic wrap. Roll out the dough to a thin, large circle, about 15” in diameter. Remove the top layer of plastic wrap, and turn the sheet of dough in to a 9” pie tin. Press the dough down into the corners.

Roll out the second disk of dough in the same manner, but keep it sandwiched between the plastic wrap. Put them back in the fridge to chill.

Preheat oven to 400° F.

When the filling has cooled enough to handle, bring out the pie crust and spoon the filling inside. Use a slotted spoon to avoid putting the cooking liquid into the pie. Place the second sheet of dough on top. Trim around the sides of the tin, press the top and bottom crusts together around the edges. Cut slashes in the top crust. Use any leftover dough to make small decorations.

Bake for 45 minutes, until the crust is golden brown.

1 double batch of pie crust dough ½ cup sugar ¼ cup arrowroot powder ½ tsp cinnamon 4 cups blueberries (fresh or frozen) 1 Tbsp butter 1 tsp lemon juice

Preheat oven to 400° F.

Prepare the bottom pie crust in the pie tin.

Stir together the sugar and arrowroot powder. Cut the butter into the mixture until it is no longer dry. Stir in the cinnamon and lemon juice, then gently stir in the blueberries, to coat them.

Pour the filling mixture into the pie tin.

Place remaining pie crust on top, seal and flute edges. Slit the top crust a few times for steam to escape. Or do a decorative top crust with holes in it.

Place a pie shield or strips of foil around edges before baking. Bake for 40-45 minutes or until juices begin to bubble through slits, removing foil or shield at around 25 minutes into baking.

Cool completely before cutting.
