cocoa

½ cup sugar 1/3 cup cocoa powder 2 Tbsp chocolate chips 2 cups water 1 cup cashew butter (no salt or sugar added) tiny pinch of salt tiny pinch of baking soda ½ tsp vanilla extract

Combine all ingredients except vanilla over low heat. Stir until the chocolate chips and cashew butter are melted and completely mixed in.

Remove from heat into a large container. Stir in the vanilla. Chill in the fridge or freezer until totally cold.

Churn in ice cream machine for 20 minutes.

1 cup sugar ¾ cup flour 2/3 cup cocoa powder ½ cup powdered sugar ¾ tsp salt 2 eggs ½ cup vegetable oil 2 Tbsp water or fruit juice ½ tsp almond extract Optional: ½ cup mix-ins (chocolate chips, fruit, nuts, marshmallows, etc)

Preheat oven to 325° F. Line an 8” cake pan with baking parchment and spray the parchment with cooking spray.

In a medium bowl, stir together all ingredients until mixed. It is a very thick batter. Pour the batter into the baking pan and spread it out with a spatula.

Bake for 30 minutes if your pan is a little larger. For smaller pans (thicker brownies) go up to 40-45 minutes. If a toothpick comes out mostly clean, it is done. It's better to take them out of the oven sooner than later, as they will repose and firm further in the hot pan.

2 cups flour ¼ cup sugar ¼ cup brown sugar ½ tsp salt ½ Tbsp baking soda 1 cup milk, water, or nut milk ½ cup butter or coconut oil 1 egg 1 Tbsp lemon juice 1 tsp vanilla or orange extract (optional)

Preheat oven to 450° F. Grease a muffin tin, or put in paper baking cups.

Stir together the flour, sugars, salt, and baking soda.

In a small bowl, melt the butter/coconut oil. Add the milk/water/nut milk, egg, lemon juice, and vanilla/orange extract. Whisk until completely combined.

Pour the liquid into the flour mixture, stirring until just combined. Divide evenly into the muffin cups, about ¼ cup each.

Bake for 5 minutes, then reduce the heat to 400° F and bake for 10-12 minutes, until a tester comes out clean.

Makes 10-12 regular sized muffins. Cooking times will be shorter for small muffins and longer for large muffins.

Variations

Add to the dry ingredients 1 to 1 ½ cups of a filling, such as dried fruit, chocolate chips, chopped nuts, berries, chopped fresh or frozen fruit, rolled oats or barley. Use honey instead of sugar. Add 2 Tbsp cocoa powder. Add 2-3 tsp of spices such as cinnamon, nutmeg, ginger, cardamom, etc. Add 2 Tbsp each of poppy seeds and lemon zest.

This is meant to be a basic recipe that can be customized as you wish for different flavors.

For 8 servings:

1 cup cocoa powder 2 cups cold water 1 cup sugar 6 cups milk or plant-based milk 2 tsp cinnamon 2 tsp nutmeg 2 tsp allspice 1 ½ Tbsp vanilla extract

For 1 serving:

2 tsp cocoa powder ¼ cup cold water 2 tsp sugar ¾ cup milk or plant-based milk dash of cinnamon (approx. 1/8 tsp or less) dash of nutmeg dash of allspice 1 tsp vanilla extract

In a pot over medium heat, whisk together the cocoa powder and water until smooth. Add the sugar and stir until dissolved. Add the remaining ingredients and stir until it heats to steaming. Do not let it boil. It can be served as is, or with toppings such as marshmallows, whipped cream, ice cream, etc.

Makes one large serving.

1 ½ cups oat milk or nut milk 2 Tbsp cocoa powder 2 Tbsp semi-sweet or dark chocolate chips 1 Tbsp sugar ½ tsp vanilla extract

Combine all ingredients except vanilla in a small pot over medium heat. Whisk the mixture as it heats. Keep heating and stirring until it is smooth and the chocolate chips are completely melted. Don't let it get hot enough to boil. Add the vanilla extract at the very end.

1 mint teabag (1 Tbsp dried mint leaves) 1 ¾ cup (14 oz) sweetened condensed milk ½ cup cocoa powder 2 cups cream 1 cup milk 1 Tbsp vanilla extract ½ cup chopped nuts 1 cup multi-colored mini marshmallows

Heat the cream in a small pan over high heat until it is steaming. Add in the mint teabag. Remove from heat, cover, and let steep for 1 hour. Remove teabag and chill completely.

In a small pan over low heat, stir together the sweetened condensed milk and cocoa powder for about 5 minutes, stirring until smooth. Remove from heat. Stir in the cream, milk, and vanilla. Chill completely.

Churn in an ice cream machine according to its directions. Add the chopped nuts and marshmallows at the end, churning for about 5 more minutes to mix them in. For my machine, the bowl needs to be completely frozen. Churn for 15 minutes, then 5 more minutes with the nuts and marshmallows.

Can be served soft, or transferred to an airtight container to be frozen.

3 cups milk 2/3 cup sugar ¼ cup cornstarch 3 egg yolks 3 Tbsp unsweetened dark cocoa 1/8 tsp salt ½ tsp vanilla extract ½ cup dark chocolate chips

Put 2 ½ cups milk, the cocoa, and the salt in a saucepan over med-high heat. Sprinkle sugar on the milk, without stirring.

In a separate bowl, whisk the cornstarch into the remaining milk. Add egg yolks and beat well.

Right when milk comes to a boil, remove from heat and stir in the cornstarch mixture. Keep stirring as the mixture begins to thicken. Return to heat and cook for 1-2 minutes, stirring constantly as it thickens. Remove from heat and stir in chocolate chips and vanilla. Serve warm.

A classic and old-fashioned frosting that's thick and marshmallowy.

½ cup sugar ¼ cup corn syrup 2 Tbsp water 2 egg whites 1 tsp vanilla

Mix sugar, corn syrup and water in a saucepan. Cover, heat to a rolling boil over medium heat. Uncover and keep boiling rapidly until it reaches 242 on a candy thermometer, or it forms a firm ball which holds its shape until pressed when dropped in cold water.

As mixture boils, beat egg whites until stiff peaks form. Pour the hot syrup very slowly in a thin stream into the egg whites, beating constantly on medium speed. Add vanilla, beat on high speed until stiff peaks form. Variations

Cherry Nut: Stir in ¼ cup candied cherries and ½ cup chopped nuts.

Chocolate Revel: Stir in ½ cup semisweet chocolate chips or 1 ounce of baking chocolate, coarsely grated.

Cocoa: sift ¼ cup cocoa over finished frosting and fold in.

Fruity: Use any fruit juice instead of water.

Honey: Use honey instead of corn syrup.

Lemon: Substitute 1 Tbsp lemon juice for the vanilla and beat in ¼ tsp lemon zest.

Maple Pecan: Stir ¼ tsp maple flavoring and ½ cup chopped pecans into Satiny Beige frosting (below).

Peppermint: stir in 1/3 cup coarsely crushed peppermint candy, or ½ tsp peppermint extract.

Pineapple: Substitute 1 tsp lemon vest for the vanilla, and stir in 1 can (8 ounces) of crushed pineapple, drained.

Pink Mountain: Use maraschino cherry juice instead of water.

Raisin Nut: Stir in ¼ cup chopped raisins and ¼ cup finely chopped nuts.

Satiny Beige: Use packed brown sugar instead of of white sugar and use ½ tsp vanilla instead of 1 tsp

Tea: Use any kind of strongly brewed tea instead of water.

Tutti Frutti: Fold in chopped nuts and dried and candied fruits equal to ¼-½ cup.
