Wheat and Honey

frozen

½ cup sugar 1/3 cup cocoa powder 2 Tbsp chocolate chips 2 cups water 1 cup cashew butter (no salt or sugar added) tiny pinch of salt tiny pinch of baking soda ½ tsp vanilla extract

Combine all ingredients except vanilla over low heat. Stir until the chocolate chips and cashew butter are melted and completely mixed in.

Remove from heat into a large container. Stir in the vanilla. Chill in the fridge or freezer until totally cold.

Churn in ice cream machine for 20 minutes.

2 cups orange juice 1 cup sugar ½ Tbsp unflavored gelatin powder 2 Tbsp cold water ½ cup hot water ½ cup cold water

Combine orange juice with sugar over low heat and stir until sugar is dissolved.

In a large bowl, stir together the gelatin with 2 Tbsp cold water. When it seems smooth, add in the hot water and stir until it's dissolved. Then stir in the ½ cup cold water. Stir the orange mixture into the gelatin mixture until homogeneous. Cover and chill in the fridge or freezer until totally cold.

Churn in an ice cream machine for 20 minutes. It will have a slushy texture. Transfer to a lidded container and freeze until desired hardness.

1 ½ lb strawberries ½ cup sugar 1 Tbsp butter 1/3 cup strawberry jam 1 cup 2% milk ½ cup cream

Cut tops off strawberries. Combine strawberries, sugar, and butter in a pot. Stir over medium heat until butter is melted and sugar is dissolved.

In a large bowl, combine milk and cream.

In a blender, puree the strawberries with their syrup, and the jam, until totally smooth. Stir into the milk mixture.

Cover the bowl with plastic wrap and chill in fridge or freezer until completely cold.

Churn in ice cream machine for 20-25 minutes. It can be served soft at this point, or transferred to an air-tight container to freeze harder.

This recipe makes 2 batches for my machine.

3 peaches ¾ cup milk or cream 2 Tbsp honey 1 cup plain yogurt

Cut the peaches into slices, removing the pit. Puree the peach, milk/cream, and honey, until it is liquid. Combine this mixture with the yogurt in an ice cream machine and churn it for 20 minutes, or according to your machine's directions.

4-6 pears ¾ cup water 2 Tbsp maple syrup ½ tsp ground cardamom

Before chopping the pears, remove wax from the skin by dipping the pears in hot water for about 30 seconds and scrubbing them with a clean, rough cloth. The color of the skin may change, but it doesn't damage the texture or flavor.

Chop the pears into small pieces, removing the core, until you have 6 cups.

Bring to a boil over high heat the pear, water, and maple syrup. Reduce heat to medium and boil, covered, until pears are completely soft.

Add the cardamom. If most of the water has boiled off, add another ½ cup. Puree the mixture in a blender until completely smooth. Transfer to another container and chill out completely.

Once it is cold, process it in an ice cream machine according to the machine's instructions.

3 cups strawberries, leaves removed & cut in half 2 Tbsp honey 2 Tbsp sugar 1 ¾ cup (14 oz) coconut milk

Cook the honey, sugar, and strawberries over medium-high heat until thickened and mushy. Mash the strawberries, or puree them if you desire a smooth consistency. Chill until completely cold.

In a large bowl, stir together the strawberry mixture with the coconut milk. If the coconut milk has separated, beat it until it's homogenous, before adding the strawberries. Beat the ingredients together until smooth.

Churn according to the directions of your ice cream machine.

2 cups apple juice ¼ cup lemon juice 2 Tbsp honey ½ cup milk ½ cup cream

I prefer to make apple juice with my juicer, but store-bought is fine. Stir together all ingredients. Chill in the fridge until it is completely cold. Churn in ice cream machine for 20 minutes, then transfer to a container and freeze until hard.

1 mint teabag (1 Tbsp dried mint leaves) 1 ¾ cup (14 oz) sweetened condensed milk ½ cup cocoa powder 2 cups cream 1 cup milk 1 Tbsp vanilla extract ½ cup chopped nuts 1 cup multi-colored mini marshmallows

Heat the cream in a small pan over high heat until it is steaming. Add in the mint teabag. Remove from heat, cover, and let steep for 1 hour. Remove teabag and chill completely.

In a small pan over low heat, stir together the sweetened condensed milk and cocoa powder for about 5 minutes, stirring until smooth. Remove from heat. Stir in the cream, milk, and vanilla. Chill completely.

Churn in an ice cream machine according to its directions. Add the chopped nuts and marshmallows at the end, churning for about 5 more minutes to mix them in. For my machine, the bowl needs to be completely frozen. Churn for 15 minutes, then 5 more minutes with the nuts and marshmallows.

Can be served soft, or transferred to an airtight container to be frozen.

Stir all ingredients together, & churn according to your machine's directions.

For my machine (Cuisinart), the bowl needs to be completely frozen in advance, then churn for 15-20 minutes.
