Wheat and Honey

eggyolk

2 cups raw cranberries 1 ¾ cup (14 oz) sweetened condensed milk 3 egg yolks 1 pie crust (graham cracker crust, or pre-baked)

Preheat oven to 350° F.

Boil cranberries in 2-3 cups water, until they are mostly split—it only takes a few minutes. Drain and discard the water. Combine the cranberries, condensed milk, and egg yolks in a blender, and blend until smooth and light. Pour into pie crust. Bake for 15 minutes. Let cool at room temperature, then chill for at least 3 hours before serving.

¾ cup sugar 2 Tbsp arrowroot powder 1 ½ cups orange juice 3 egg yolks 2 large oranges, or 6 clementines or tangerines 2 Tbsp butter 1 Tbsp grated orange peel 1 Tbsp lemon juice

1 deep-dish, 9” pie crust, baked

Meringue: 3 egg whites 2 Tbsp sugar

Preheat oven to 350° F.

Grate the peel of an orange to get 1 Tbsp of orange zest (only the very outer layer of the peel, no white pith). Then peel the oranges, discard the peel, seeds, and as much pith as possible, and puree the oranges and orange zest in a blender. Chop the butter into small cubes. In a bowl, combine the orange puree, butter, and lemon juice.

Separate the eggs. Beat the egg yolks until smooth. Place the egg whites somewhere warm.

In a large pot, stir together the arrowroot and sugar. Stir in the orange juice. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low.

Pour a small amount of hot filling into the egg yolks, stirring as you pour. Then pour the yolk mixture back into the pan, stirring constantly as you pour.

Remove from heat. Stir in the pureed orange mixture. Pour into pie crust.

In a small mixing bowl, beat egg whites on medium speed until soft peaks form. Gradually add sugar, 1 tsp at a time, beating on high until stiff glossy peaks form and sugar is dissolved. Spread evenly over hot filling, sealing edges to crust.

Bake at 350° for 15 minutes or until meringue is golden brown. Let cool in the fridge until completely chilled before serving. The longer it has time to chill, the more solid the filling becomes.

Period: England, 1300s-1400s Sources: Medieval Cookery

Crust: 1 cup semola flour 1 Tbsp sugar 1 tiny pinch of saffron 1/8 tsp salt 6 Tbsp butter ¼ cup water

Filling: 6 egg yolks 1 Tbsp water ½ tsp gelatin ¼ cup sugar ½ tsp powdered ginger ¼ cup minced dates ¼ cup minced raisins, dried currant berries, or similar

For the crust: Stir together the flour, sugar, saffron, and salt. Cut in the butter until it creates moist crumbs, leaving some small chunks of butter. Stir in the water, forming a dough. Wrap the dough in plastic wrap and chill it in the fridge while making the filling.

Preheat oven to 350° F.

Dissolve the gelatin in the water. Beat together the egg yolks, gelatin, sugar, and powdered ginger until the mixture is very light, as light as you can reasonably get it. Then stir in the dates and raisins.

Divide the crust dough into 12 pieces, 6 of them slightly smaller than the others. Roll the larger balls out into circles and line 6 cups in a mini tart pan. Put about 2 Tbsp of filling into each cup—there will be a little extra, so divide it evenly. Then roll the smaller balls of dough to make top crusts. Leave a little bit of space, if you can, between the filling and the top crust.

Bake for 35-40 minutes, until the crust is golden brown.

(Medieval-inspired. Medieval-probable.)

Use a 9” deep dish pie tin. You also want a meat thermometer.

Pie crust:

¾ cup butter 2 cups whole wheat pastry flour or semola flour ½ cup water ¼ tsp salt beaten egg whites

Filling:

2 Tbsp honey ½ cup dried fruits, minced (such as raisins, blueberries, prunes, cherries) 1 Tbsp ground cinnamon 3 egg yolks 2 Tbsp minced nuts 1 cup carrots, finely chopped ¾ cup fennel bulb, finely chopped 2 cups chicken, cut into about 1” cubes ½ tsp salt ½ tsp pepper 1 tsp thyme ½ tsp mace

Crust: Cut the butter into the flour until it is crumbly and there is no more dry powder. Dissolve the salt in the water, and stir into the flour to make a soft dough. Knead it a bit to get it all together. Form a ball, wrap in plastic wrap, and place in fridge to chill until hard.

Mix the chicken pieces, salt, pepper, thyme, and mace. Set aside, let chill.

Stir together the rest of the filling ingredients.

When the crust dough is hard, divide it in half. Place a piece of waxed paper on the counter, and sprinkle with flour. Roll out half the dough to a circle big enough to fit in the pie tin. It should be somewhat thick crust. Place the tin upside-down on the dough, and flip it over with the dough and waxed paper to get the dough inside. Remove the waxed paper and press the dough down into the tin.

Around this time, set the oven to preheat to 350° F.

Stir the chicken mix into the rest of the filling. Spread the filling into the pie tin.

Roll out the rest of the crust in the same way, using the waxed paper to lift it and place it on the top of the pie. Trim the edge of the crust and pinch the top and bottom together.

Brush the beaten egg whites onto the crust. Make a cool design on the top crust with the remaining dough! Make sure there are some cuts in the top crust. Brush the design with egg whites as well.

Bake for about 1 hour, until the internal temperature reaches or exceeds 165° F.

Custard: 3 ¾ cups milk ½ tsp salt 1 tiny pinch lavender buds ¼ tsp dried mint leaves 1/8 tsp dried chamomile flowers 1/3 cup honey ¼ cup + 1 tsp cornstarch 3 egg yolks 1 ½ tsp vanilla extract 1 ½ Tbsp butter

Combine 3 cups milk, salt, and honey in a saucepan over med-high heat. Grind the lavender, mint, and chamomile into powder and stir into the milk.

In a separate bowl, whisk the cornstarch into the remaining milk. Add egg yolks and mix well.

When milk comes to a boil, remove from heat and stir in the cornstarch mixture. Keep stirring as the mixture begins to thicken. Return to heat and cook for 1-2 minutes, stirring occasionally. Remove from heat and stir in butter and vanilla. It will continue to thicken as it cools.

Pears: 2 pears 1/3 cup honey ½ tsp ground ginger ½ tsp pure vanilla extract

Arrange an oven rack about 5 inches from the broiler and heat the broiler on high. Line a rimmed baking sheet with foil.

Cut the pears in half lengthwise and scoop out the core and seeds. Arrange the pear halves, cut side up, on the prepared baking sheet.

In a small bowl, stir the honey, ginger, and vanilla. Spoon evenly into each pear half.

Broil the pears, rotating the pan once, until bubbling and caramelized, about 5 minutes.

Crust:

½ cup flour ½ cup rolled oats ½ tsp salt ¼ cup cold butter, cubed 2 Tbsp cold water

Stir together the flour, oats, and salt. Cut in the butter until it's clumpy. Stir in the water. Put dough on a piece of plastic wrap and use the wrap to press it into a ball, then chill.

Preheat oven to 350° F.

Meanwhile, make the filling:

2 ½ cups almond flour 1 cup quince jam 2/3 cup dried or candied fruit, finely chopped 1 tsp cinnamon 2 egg yolks ½ cup sour cream

Mix all ingredients together.

When the crust is firm to the touch, place the ball of dough in a pie tin. Use the plastic wrap as a shield to roll or press out the dough to shape the crust in the pie tin. Press the filling evenly into the crust.

Bake for 30 minutes.
