
Small batch for just 2 sandwiches.
2 Tbsp butter
2 Tbsp cream cheese or chevre
¼ cup fresh mint leaves, chopped
1/8 tsp salt
4 slices of soft artisan bread
½ of a cucumber, thinly sliced or spiraled into noodles
The butter and cheese need to be soft. Stir the butter, cheese, mint, and salt into a smooth mixture.
Spread the mixture onto one side of each piece of bread, then add cucumber slices/noodles and form sandwiches. Cut them diagonally into quarters.

1 cup plain Greek yogurt
2 cloves garlic, minced
1 Tbsp chopped fresh mint leaves
½ tsp ground black pepper
Cut the cucumber in half lengthwise and remove the seeds. Grate the cucumber into a bowl. Stir in all the other ingredients.
It gets better as the flavors combine over time (like 30 minutes), but you can use it immediately.

8 cups filtered water
1 cucumber, about 8” long
Run the cucumber through a juicing machine. You should get about 1 cup of juice. Discard the pulp. Combine juice with the water. Served chilled.
For a brighter flavor, add ¼ cup lemon juice or lime juice, and ¼ cup sugar or honey.
