arrowroot

1 cup chopped nuts 2 pounds plums 1/3 cup honey ½ tsp baking soda 1 ½ Tbsp fresh sage, minced 3 Tbsp arrowroot powder Double batch of pie crust

Preheat the oven to 375° F.

Roll out the pie crust, place in pie tin, and chill until ready to use.

Pit the plums. Mix the plums with the rest of the ingredients. Pour into the pie tin and cover with the top crust, crimping the edges of the crusts together. Bake for 50-60 minutes. Let cool before serving.

4 plums, pitted 1 Tbsp arrowroot powder 1 ½ cups water

Puree together the plums, arrowroot and ½ cup water, until it is smooth. Pour into a pot and stir in the remaining water. Cook over medium heat, letting it simmer without coming to a true boil, stirring, until it has thickened.

1 double batch of pie crust 1 Tbsp arrowroot powder 6 cups apples, chopped 1 tsp ground cinnamon 1 tsp ground nutmeg ¼ cup honey 1 egg, beaten ground ginger Ground cloves

Preheat oven to 350° F.

Stir together the apples, arrowroot, honey, cinnamon, and nutmeg.

Make sure the crust dough is chilled thoroughly. Divide in half and roll out each half on separate pieces of waxed paper, using flour as needed to keep them from sticking. roll to about 1/8” thick. Place one sheet of dough in a pie tin, fitting it inside and trimming the edges. Fill with the apples. Place the other sheet of dough over the top, trimming the edges and crimping the top and bottom together along the edge. Brush the beaten egg on the top crust and sprinkle with ground ginger and ground cloves. Cut slashes into the top crust.

Bake for 40-50 minutes until the crust is golden brown.

Combine all ingredients in a pan. Let sit for 5 minutes. Put over medium heat and simmer for a few minutes until thick. Let it cool completely to continue to thicken.

Filling: 6 pears 6 Tbsp honey 2 Tbsp arrowroot powder or cornstarch ½ tsp ground nutmeg

Topping: 1 cup flour 2/3 cup rolled oats 6 Tbsp butter 6 Tbsp sugar

Preheat the oven to 375° F.

Chop the pears into chunks, removing the cores. Stir together chopped pears, honey, and arrowroot in an 8” square pan.

Mix the flour, oats, and sugar in a bowl and rub in the butter until it is thoroughly combined, with a texture like soft crumbs, and no dry powder. Spread evenly over the fruit.

Bake 35-45 minutes.

Crust: ¾ cup butter 2 cups flour ½ cup water ¼ tsp salt

Cut the butter into the flour until it's crumbly and there's no dry powder.

Dissolve the salt into the water, then stir it into the flour and butter. Stir to make a soft dough. It will be a lot like cookie dough.

Stick it in the fridge to chill until hardened.

Preheat oven to 350° F.

Filling: 5 cups chopped apples 1/3 cup honey 1 Tbsp arrowroot powder, flour, or corn starch ½ tsp allspice ½ cup redcurrant jelly*

Stir together the apples, arrowroot, allspice, and honey.

Roll out half the crust dough on a piece of waxed paper dusted with flour. Use flour as necessary on top and bottom to prevent sticking. Roll to 1/8”.

Dust the pie tin with flour. Use the waxed paper to flip the crust over into the pie tin. Trim the edges and fill in any holes.

Spread the redcurrant jelly in the bottom of the crust, then put in the apple mixture.

Roll out the rest of the crust dough to make the top crust. Do whatever type of design you want.

Bake for 45-60 minutes, until the crust is golden brown and the apples are soft.

*If you have fresh or dried redcurrants available to you, make a quick sort of jam by cooking them with water and honey, and mashing them up. Alternatively, you could stir the plain redcurrants in with the apples instead of using jam.

12 oz plums 2 Tbsp arrowroot powder 1 cup flour ½ cup almond meal 2 tsp baking powder ¼ tsp salt ½ cup applesauce 1 egg ½ cup milk or nut milk ½ cup honey ¼ tsp almond extract ¼ cup chopped almonds

Preheat the oven to 375° F. Grease and flour a 9-inch cake pan.

Remove the pits and roughly chop the plums. Combine them with the arrowroot powder in a small bowl and set aside.

In a large bowl, stir together the flour, almond meal, baking powder, and salt.

In a separate bowl, combine the applesauce, egg, milk, honey, and almond extract. Whisk to blend thoroughly.

Add the wet ingredients to the flour mixture and whisk until just combined.

Pour the batter into the prepared pan. Gently place the plum mixture evenly over the entire top of the batter. Since the plums will displace the batter, it is important to make an even layer as you put it down. Put the plums all the way to the edge. Sprinkle the chopped almonds on top.

Bake the cake for 45-50 minutes, or until a tester inserted in the center of the cake comes out clean.

1 9” pie crust, baked 4 cups strawberries, sliced ½ cup sugar 3 Tbsp cornstarch or arrowroot powder ¾ cup water

Put half of strawberries in the baked pie crust.

Combine remaining berries with sugar in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently. Mash the berries.

In a small bowl, stir together cornstarch/arrowroot and water. Gradually stir cornstarch mixture into boiling strawberry mixture. Reduce heat and simmer mixture until thickened, stirring constantly. Pour mixture over berries in pastry shell.

Chill thoroughly before serving.

Duff:

2 eggs, separated ½ cup brown sugar ¼ cup butter ¼ cup cream cheese 2 cups plums, pitted and quartered 1 cup flour ½ tsp salt

Warm the egg whites in a double boiler with a bit of the brown sugar, whisking. When they are warm, remove from heat and beat until stiff peaks form.

Beat egg yolks and a bit of the brown sugar. Cream in the rest of the sugar, cream cheese, and butter. Stir in plums. Fold in the egg whites.

Fold flour and salt into plum mixture. Pour into a well-greased 1-quart mold or bowl, and tie waxed paper loosely over the mold, or cover with foil scrunched around the edges. This is to prevent water from dripping onto the pudding when it condenses on the lid of the steamer. Place mold in steamer and steam for 1 hour or until pudding tests done.

If you don't have a steamer, you can place the mold in a large pot with water. The pot needs to be large enough that the pudding mold doesn't stick out the top. If it floats, that's fine, if not, use something underneath to stabilize it and keep it off the bottom of the pot. Place a well-fitting lid on top of the pot.

When done, remove from steamer and let cool slightly. Loosen the edges of the pudding by running a knife between the pudding and the bowl. Turn out onto the serving plate.

Sauce:

½ cup water ¼ cup honey 2 Tbsp fruit juice (or other sweet, non-dairy drink) 2 tsp arrowroot powder 2 tsp water

Mix ½ cup water and honey in a small saucepan over medium-high heat. Bring to a boil. Boil steadily for 5 minutes. Add fruit juice to taste. Reduce heat. In a cup, mix the arrowroot with 2 tsp water until smooth. Stir into the hot liquid. Increase heat to medium-high. Heat gently for 1-2 minutes, stirring constantly as the sauce thickens. Remove from heat reaches a boil.

Preheat oven to 350º F. Prepare the pie crust in the baking tin. Line the bottom of the crust with a layer of sliced almonds.

Mix arrowroot and spices in large mixing bowl. Stir in cherries and honey. Pour into the pie crust. Cover with the top crust.

Bake for 35-40 minutes or until crust is brown and juice begins to bubble.
