4 cups (12 oz) fresh cranberries 1 cup raisins, dried cranberries, or similar dried berries ½ cup sugar ¾ cup brown sugar 2 tsp ground cinnamon ½ tsp ground ginger ¼ tsp ground cloves ¼ tsp salt ¼ tsp ground black pepper 1 cup water, vegetable stock, or orange juice ½ cup minced onion ½ cup minced Granny Smith apple ½ cup minced celery

In a medium pot, combine the cranberries, dried fruit, sugar, brown sugar, cinnamon, ginger, cloves, salt, pepper, and water/stock/orange juice. Bring to a boil over medium-high heat, then reduce the heat and simmer over low heat until the berries start to pop, about 5-7 minutes.

Add the onion, apple, and celery. Stir occasionally until the mixture thickens, 5-10 more minutes. Remove from heat.

For best flavor, refrigerate it overnight.

Spices: For regular healing potion: ½ tsp ground ginger For greater healing potion: ¼ tsp ground clove For superior healing potion: ¼ tsp smoked paprika For supreme healing potion: 1/8 tsp ground cayenne pepper

½ tsp pearl dust** For regular healing potion: pink pearl dust For greater healing potion: white pearl dust For superior healing potion: silver pearl dust For supreme healing potion: gold pearl dust

*The floral tea I used in this batch was a combination of hibiscus petals, lemon peel, orange peel, rose hips, and rose petals.

**Pearl dust is a powdered food coloring, made with mica powder, used to decorate pastries. It is shimmery, and not to be confused with color dust, which is powdered food coloring that is not pearlescent. It is also called luster dust in different brands.

Combine raspberries, water, floral tea, and spice over high heat in a large pan. Bring to a boil, then lower to medium heat to maintain a boil for 25 minutes.

Put a fine mesh strainer, or a colander lined with cheesecloth, over a tall bowl or pitcher. Pour the mixture into the strainer and let it slowly strain through gravity, without pressing the mixture.

Eventually, after an hour or more, you should have about 1 ½ cups of syrup.

Remove and reserve 2 cups of carbonated water from its bottle. Add the pearl dust into the bottle, then pour the raspberry syrup into the bottle. Top off any empty space with the reserved carbonated water. Screw on the lid and gently tilt the bottle back and forth to mix it.

Crust: 2 cups semola flour ½ tsp salt ½ tsp dried rosemary ½ tsp dried dill weed ¾ cup butter ½ cup cold water

Filling: ½ lb ground pork 1/3 lb ground chicken 1/3 lb ground lamb 1 cup chopped onion 1 ½ cup grated turnip ½ tsp crushed garlic ½ tsp salt ¼ tsp celery seed ¼ tsp ground clove 1/8 tsp ground cinnamon 1/8 tsp ground nutmeg

For the crust: Stir together the semola flour, salt, rosemary, and dill weed. Cut the butter into small chunks, then cut it into the flour mixture until the mixture becomes a crumbly paste. Drizzle and stir in the water. Press it together to form a dough, then divide into 2 balls. Press each ball into a thick disk, wrap them in plastic wrap, and put in the fridge to chill.

Combine all the filling ingredients in a large pot over medium-high heat. Cook, stirring occasionally, until the meat is cooked, then remove from heat.

Bring out the crust dough. Lay out a large sheet of plastic wrap, put one unwrapped disk of dough on it, then cover with another sheet of plastic wrap. Roll out the dough to a thin, large circle, about 15” in diameter. Remove the top layer of plastic wrap, and turn the sheet of dough in to a 9” pie tin. Press the dough down into the corners.

Roll out the second disk of dough in the same manner, but keep it sandwiched between the plastic wrap. Put them back in the fridge to chill.

Preheat oven to 400° F.

When the filling has cooled enough to handle, bring out the pie crust and spoon the filling inside. Use a slotted spoon to avoid putting the cooking liquid into the pie. Place the second sheet of dough on top. Trim around the sides of the tin, press the top and bottom crusts together around the edges. Cut slashes in the top crust. Use any leftover dough to make small decorations.

Bake for 45 minutes, until the crust is golden brown.

Makes 1 pint.

½ lb grapes (any type) ¾ cup red wine vinegar ½ cup sugar ¾ tsp black peppercorns ¾ tsp mustard seeds ¼ tsp salt 4 whole cloves 1 cinnamon stick 2 grams dried orange peel (Probably 1 tsp) 9 grams candied ginger (probably 1 Tbsp)

Wash the grapes and remove stems. Put in a clean 1-pint jar.

Cook the rest of the ingredients over medium heat for about 10 minutes. Pour everything into the jar with the grapes. Set aside for about an hour to cool, then put the lid on and turn the jar upside-down to distribute the spices.

Store in fridge. They will take about 24 hrs to cure. They will keep for 4-5 days.

Crust: 1 cup flour 6 Tbsp butter ¼ cup water

Filling: 2 lbs. apples ½ cup dried fruits (this time I used prunes, raisins, dried cherries, dried blueberries, crystallized ginger) ½ cup sugar ¼ tsp ground cinnamon ¼ tsp ground nutmeg ¼ tsp ground mace ¼ tsp salt 1/8 tsp ground cloves pinch of saffron powder (optional)

Cut the butter into the flour until it is crumbly and there are no more large chunks of butter. Stir the water into the flour. Knead it a little bit to make a dough, using flour if necessary to keep from sticking. Roll it thin and place in a 9” pie or tart dish. Chill until ready to use.

Preheat oven to 375° F. Core the apples and chop them into small pieces. Mince the dried fruits. Combine the apples and dried fruits with the spices and sugar, stirring to coat. Place into the tart crust.

Cover with aluminum foil and bake for 45 minutes, removing the foil toward the end of baking time.

1 double batch of pie crust 1 Tbsp arrowroot powder 6 cups apples, chopped 1 tsp ground cinnamon 1 tsp ground nutmeg ¼ cup honey 1 egg, beaten ground ginger Ground cloves

Preheat oven to 350° F.

Stir together the apples, arrowroot, honey, cinnamon, and nutmeg.

Make sure the crust dough is chilled thoroughly. Divide in half and roll out each half on separate pieces of waxed paper, using flour as needed to keep them from sticking. roll to about 1/8” thick. Place one sheet of dough in a pie tin, fitting it inside and trimming the edges. Fill with the apples. Place the other sheet of dough over the top, trimming the edges and crimping the top and bottom together along the edge. Brush the beaten egg on the top crust and sprinkle with ground ginger and ground cloves. Cut slashes into the top crust.

Bake for 40-50 minutes until the crust is golden brown.

½ cup blackcurrant jam 1-2 Tbsp butter 2 ½ cups apples, chopped into 1” pieces 4 eggs ½ cup half-and-half ½ tsp ground cloves ½ tsp cinnamon 1 Tbsp maple syrup

Preheat oven to 325 ° F.

Butter a pie tin and spread the blackcurrant jam over the bottom.

Boil apple pieces in water until soft. Drain apples, and puree with the half-and-half, making it as smooth as possible. Beat the pureed mixture with the eggs, maple syrup, and spices. Pour into the pie tin over the jam.

Bake for 45-60 minutes, until the custard is set and a knife or toothpick inserted in the center comes out clean. Let cool before serving.

Crust: ¾ cup flour ¾ cup rolled oats 1/3 cup butter ¼ cup sour cream or plain yogurt 1 ½ tsp ground ginger, minced fresh ginger, or minced candied ginger

Filling: ¼ cup brown sugar 2 Tbsp flour ½ cup sour cream ½ cup blackberries 2 Tbsp milk ¼ tsp ground cloves 1 pear, cored and sliced thinly

Preheat oven to 350° F.

Crust: Stir together the flour and oats. Cut in the butter until crumbly and there's no dry powder. Stir in the sour cream/yogurt. It should be a somewhat wet dough. Sprinkle flour in the pie tin, then dump the dough in and press it evenly onto the bottom and sides.

Filling: Mix flour and brown sugar well. Stir in sour cream, berries, milk, and cloves. Mix well and spread into the crust. Lay the pear slices over the cream.

Bake for about 45 minutes until the crust is golden brown, the edges of the pear slices are browned, and the cream is bubbling.

1 lb cherries, any variety, pits and stems removed 2 Tbsp apple juice, as desired for sweetness ¼ tsp ground cinnamon A pinch of ground cloves 1 cup milk or nut milk

If using canned cherries, drain out and discard the syrup. If using fresh cherries and juice comes out from pitting them, use the juice!

Blend all ingredients in a blender until smooth. Be sure to blend it thoroughly. Strain the skins out if necessary.

Crust:

½ cup flour ½ cup rolled oats ½ tsp salt ¼ cup cold butter, cubed 2 Tbsp cold water

Preheat oven to 400° F.

Mix flour, oats, and salt. Cut in the butter until it's crumbly. Stir in the ice water 1 Tbsp at a time, then press together into a ball. Wrap in plastic wrap and refrigerate or freeze to make it harder.

Roll out the crust between two pieces of plastic wrap or waxed paper. Press into a pie or tart pan. Prick bottom with a fork. Bake for 5 minutes, then let cool completely.

Filling:

¼ cup brown sugar 2 Tbsp flour 1 cup sour cream 1 Tbsp fruit juice 1/8 tsp ground cloves 3 cups of pears, cored and sliced thinly

Reduce oven to 350° F.

Combine flour, sugar, sour cream, fruit juice, and cloves. Mix well and spread most of it into the cooled crust, reserving about 1/3 cup. Lay pear slices over the cream, then spread the remaining cream on top. Bake for 30-40 minutes until crust is brown and cream is bubbling. Serve warm or cool.
