Wheat and Honey

cornsyrup

¼ cup popcorn kernels ½ cup butter ¾ cup sugar ¼ cup corn syrup ½ tsp vanilla extract

Pop the kernels into plain popcorn.

Melt butter over medium heat in a saucepan. Add sugar and corn syrup. Let it simmer, stirring occasionally, for 10 minutes or less. Do not let it come to a full boil, as that will burn the caramel. It should end up a medium brown caramel color. Lighter caramel brown makes a softer caramel. As soon as it gets a reddish tint, it will create a hard caramel that tastes more like the storebought caramel popcorn. Don't let it get darker than that.

When it's done, remove from heat and add vanilla extract, stirring in well. Pour over the popped popcorn in a large bowl. Turn the popcorn gently with two spoons or rubber spatulas until it's all covered with caramel.

Eat it while it's warm, or spread it out on waxed paper for the caramel to harden.

A classic and old-fashioned frosting that's thick and marshmallowy.

½ cup sugar ¼ cup corn syrup 2 Tbsp water 2 egg whites 1 tsp vanilla

Mix sugar, corn syrup and water in a saucepan. Cover, heat to a rolling boil over medium heat. Uncover and keep boiling rapidly until it reaches 242 on a candy thermometer, or it forms a firm ball which holds its shape until pressed when dropped in cold water.

As mixture boils, beat egg whites until stiff peaks form. Pour the hot syrup very slowly in a thin stream into the egg whites, beating constantly on medium speed. Add vanilla, beat on high speed until stiff peaks form. Variations

Cherry Nut: Stir in ¼ cup candied cherries and ½ cup chopped nuts.

Chocolate Revel: Stir in ½ cup semisweet chocolate chips or 1 ounce of baking chocolate, coarsely grated.

Cocoa: sift ¼ cup cocoa over finished frosting and fold in.

Fruity: Use any fruit juice instead of water.

Honey: Use honey instead of corn syrup.

Lemon: Substitute 1 Tbsp lemon juice for the vanilla and beat in ¼ tsp lemon zest.

Maple Pecan: Stir ¼ tsp maple flavoring and ½ cup chopped pecans into Satiny Beige frosting (below).

Peppermint: stir in 1/3 cup coarsely crushed peppermint candy, or ½ tsp peppermint extract.

Pineapple: Substitute 1 tsp lemon vest for the vanilla, and stir in 1 can (8 ounces) of crushed pineapple, drained.

Pink Mountain: Use maraschino cherry juice instead of water.

Raisin Nut: Stir in ¼ cup chopped raisins and ¼ cup finely chopped nuts.

Satiny Beige: Use packed brown sugar instead of of white sugar and use ½ tsp vanilla instead of 1 tsp

Tea: Use any kind of strongly brewed tea instead of water.

Tutti Frutti: Fold in chopped nuts and dried and candied fruits equal to ¼-½ cup.

This recipe is from my grandmother, and I believe it's the original cookie recipe that used to come written on the Special K boxes.

1 cup corn syrup 1 cup sugar 1 cup peanut butter 6 cups Special K cereal

Put your cereal in a large bowl, and lay out a large sheet of waxed paper.

Bring corn syrup and sugar to a boil until sugar is dissolved. Remove from heat and mix in peanut butter.

Pour over cereal and mix well. Spoon cereal into cookies on wax paper and cool.

Substitute whatever cereal you like.

¾ cup buttermilk 1 ½ cup sugar ½ cup butter 2 Tbsp corn syrup 1 tsp baking soda

Choose a pot that is twice the size as you think you will need, as this recipe foams and triples in volume while cooking.

Mix ingredients in a pot and bring to a boil. Reduce to medium heat and stir for 8 minutes. Do not look away, just diligently stir as this can boil over easily or harden if neglected.

Enjoy pouring it over pancakes, waffles, fruit, cake, pie, anything and everything or even eat it with a spoon.

½ cup sugar ½ cup maple syrup or corn syrup ½ cup butter ½ Tbsp vinegar 1 egg 1 tsp ground black pepper ½ tsp ground allspice ½ tsp ground ginger ½ tsp ground nutmeg ½ tsp baking soda 2 ½ cups flour

Cook the sugar, maple/corn syrup, butter and vinegar in a pot over medium heat, stirring constantly, until the butter is melted and it boils. Pour into a bowl and chill down to room temperature. Beat in all the other ingredients. It will make a smooth paste.

Wrap the dough in plastic wrap and freeze for 20 minutes or chill longer. It rolls out much easier when it is hard/cold.

Preheat oven to 350° F, and line a cookie sheet with parchment paper.

On a floured surface, roll the dough to about ¼” thick, then cut out shapes. Place them in the baking sheet with about 1” in between, because they do expand a little.

Bake for 7 minutes. (If they are thicker, or the pan is too crowded, they will require a few more minutes.) They should be slightly golden brown around the edges and look puffed up. Let them repose on the baking sheet until they are relaxed and more cool, then transfer cookies to a cooling rack. They should be thin and hard enough to snap, but slightly chewy when eating.

Makes about 36 cookies.
