2 cups spinach, cooked or frozen ¼ cup dried fruit ½ cup warm milk 3 cups flour 2 tsp instant yeast 1 tsp salt 1-2 tsp herbs or spices as desired 2 Tbsp oil 1 egg

If your spinach is frozen, warm it up before mixing. Combine the spinach, dried fruit, and milk in a blender and puree until smooth. You need 1 ½ cups of puree (add more milk if necessary).

In a large bowl, stir together the flour, yeast, salt, and seasoning. In a small bowl, lightly beat the egg with the oil.

Stir the spinach mixture and egg mixture into the flour mixture. Knead it thoroughly. It will seem dry but the spinach will continue releasing moisture as it is kneaded, so don't add more liquid until you're sure it needs it.

Put the dough in a bowl coated in oil, cover it, and let rise until doubled (about 45-60 minutes).

Lightly knead the dough, then form it into rolls and place on a baking sheet. Cover and let rise for 30 minutes or until doubled. While rising, preheat oven to 375° F.

Bake for 17-20 minutes.

1 cup water ½ cup butter ¼ cup sugar ½ tsp salt 2 ¼ tsp yeast 1 egg 3 cups flour

Add ½ cup water, butter, and ¼ cup flour to a saucepan. Heat on medium heat until butter melts. Pour mixture into a large mixing bowl. Add sugar and salt, stir until dissolved.

In a small bowl, beat the egg.

Add yeast, egg, and remaining water to mixing bowl. Stir thoroughly. Stir in the rest of the flour until totally combined.

Cover bowl with greased foil and place in the refrigerator for 6-48 hours.

When ready to bake, remove dough from the refrigerator. Place dough onto a lightly floured surface and divide into 8 equal pieces. Roll each piece between your hand and the counter, working your hand in a flat, circular motion.

Place rolls on a greased baking sheet. Cover and let rise for one hour.

While rolls rise, preheat oven to 425° F. Bake rolls for 18-25 minutes, until golden-brown.

4 ¾ cups flour 4 Tbsp olive oil 2 tsp salt 1 ½ tsp yeast 2 ¼ cups warm water olive oil coarse salt dried rosemary

Coat a 9”×13” cake pan with cooking spray.

In a large mixing bowl, combine the flour, olive oil, and salt.

In a small bowl, combine yeast, with ½ cup warm water. When it is foamy, stir the yeast mixture and the rest of the water into the flour mixture.

Stir together and then knead for a few minutes to make a cohesive dough.

Place the dough into the can pan. Gently flatten it. Cover with plastic wrap and let rise for 1 hour.

After ½ hour of rising, set the oven to 375° F.

After 1 hour of rising, poke holes all over the dough with your fingers. Drizzle with olive oil and sprinkle with coarse salt and rosemary.

Bake for 28-30 minutes until golden brown.

In a small bowl, stir the honey and yeast into ¾ cup of warm water. In another small bowl, combine the butter with hot water to melt it.

In a large bowl, stir together the flours, salt, and flax seed. When the yeast is foamy and the butter is at least mostly melted, stir the water mixtures into the flour mixture.

Stir enough to form a loose dough, then knead it on a floured surface, using as much flour as necessary to make it smooth and not sticky.

Coat the bowl and dough with oil, cover loosely with plastic, and let rise for 1 hour or until doubled.

Grease a bread pan. Knead the risen dough gently on a lightly floured surface. Form it into a log and place inside the bread pan. Spread a thin layer of butter onto the top. Cover loosely with plastic and let rise for 30 minutes.

Spray the inside of the oven with water. Place the bread inside the oven and set it to 350° F. Bake for 40-45 minutes, including preheating time.

Gently roll it into a log shape. Place in a greased bread pan, coat with oil, cover, then rise again for 30 minutes.

When the dough is about 1” above the rim of the pan, bake at 350° F for 40-50 minutes, until browned on top and about 180° F inside. Let cool until it easily comes out of the bread pan.

Combine the yeast with the sugar in warm water/milk. Stir in the flour one cup at a time, adding in the salt with the last cup of flour. Knead so that it's smooth and elastic with some resistance.

Coat bowl and dough in oil or water. Place dough in the bowl and cover with plastic wrap sealed around the edges, but large and loose over the top so it doesn't smash the risen dough. Let rise for 1 hour, or until doubled, in a warm place.

Divide dough into a lot of small portions. Add a different mix-in into each piece, adding flour if necessary to anything that is too wet. Some fillings can be kneaded into the dough. Spray water into the oven or place a small pan with water inside. Put the bread pan into the oven, then start pre-heating to 350° F. Bake for 60-70 minutes until it's a dark golden brown on top and the interior measures to 190°-200° F.

¾ cup grated carrot 1 cup hot water 2 Tbsp brown sugar 2 Tbsp olive oil ¾ tsp salt 2 tsp dry yeast or .6 oz fresh yeast 1 Tbsp dried dill weed 3-3 ½ cups flour

Stir together the carrot, water, brown sugar, olive oil, and salt until the sugar is dissolved. If the water gets cold (from using cold carrots), pour some water out and reheat it.

Stir in the yeast, dill, and one cup of flour. Stir completely before adding another cup of flour, then stir that in completely before adding the third. At this point you will have to knead the dough, adding more flour if necessary. Knead until the dough is smooth around the bits of carrot. Then coat the inside of a large bowl and the dough in a small amount of oil. Place dough in bowl, cover the top, and let rise until it is doubled in size, about 1 hour.

Knead the dough lightly, then divide it into 12 even balls. Place them on parchment paper on a baking sheet. Brush olive oil and sprinkle coarse salt onto the tops of each roll. Cover them and let them rise until doubled again, about 40 minutes.

Place the pan in the oven along with a small dish of water. Set the oven to 375° F and bake, including preheat time, for 25-30 minutes, until they are golden brown on top and bottom.

2 cups warm water or barley tea 3 cups wheat flour 1 cup barley flour 2 tsp dry yeast, or .6 oz fresh yeast 2 tsp molasses, honey, or maple syrup 1 cup rolled barley 1 tsp salt 1 Tbsp oil

Mix the molasses with 1 cup water/tea in a small bowl. Sprinkle in the yeast and let it proof until foamy.

Mix 1 cup water/tea with 1 cup wheat flour, 1 cup barley flour, and ¾ cup rolled barley. When the yeast is foamy, add that in and stir it all up. Let it rise until roughly doubled.

Add in the rest of the flour (2 cups), the salt, and the oil. Knead for about 10 minutes until smooth and elastic, kneading in flour as necessary. Let rise, oiled, in a warm place, until about doubled again.

Meanwhile, soak the remaining ¼ cup of rolled barley in 2 Tbsp water or tea.

Form the dough into a loaf. Smooth the wet barley onto the top, encrusting it into the dough. Place in an oiled loaf pan and cut a slit along the top of the loaf.

Spray inside your oven or put a pan of water in there. Put in the dough and set the oven to 350° F. Bake (including preheat time) for 50-60 minutes.

Bread: 2 tsp dry yeast or .6 oz cake yeast 2 tsp sugar 2 cups warm water or soup stock 1 Tbsp salt 4 cups flour 1 tiny pinch of lavender buds ½ tsp fennel seed 1 tsp thyme

Filling: 1 pound ground sausage ¾ cup grated or minced onion ¼ cup grated carrot 1 tsp minced garlic ½ cup (4 oz) cream cheese

1 egg for glaze

Stir together the sugar, yeast, and water/vegetable stock. Stir in the flour, 1 cup at a time. With the last cup, add in the salt and herbs. Knead on a floured countertop until the dough is smooth and less sticky. Coat the dough with oil, place in an oiled bowl, cover with plastic wrap, and let the dough rise for 30 minutes.

While the dough is rising, cook the sausage, onion, carrot, and garlic in a pot over medium heat. Cook until the sausage is mostly browned. Some pink is ok, as it will be cooked again. Cut the cream cheese into chunks and stir it into the meat mixture.

Line a baking sheet with parchment paper. Roll the dough out into a rectangle taking up the whole space of the baking sheet, then place the filling along the middle 1/3 of the dough, leaving about 1 ½ inches of free space at the ends. Cut slashes along the sides of the dough.

Fold the short ends over the filling, then fold each fringe piece of dough over the middle, alternating sides and stretching at a diagonal to create a braided look. Pinch closed any large gaps in the dough. Cover with plastic wrap and let rise another 30 minutes. Towards the end, set the oven to preheat to 350° F.

When the dough is done rising, beat an egg and brush it all over the loaf.

Bake for 20-25 minutes.

Knead the dough a bit, and shape into a log. Oil the inside of the bread pan and place the dough inside. Cover with plastic wrap and let rise for 30 minutes.

Spray the inside of the cold oven with water and place the bread pan in the center of the oven. Turn the oven to 350° F. Bake for 40-45 minutes (including pre-heating time), until the crust is a deep golden brown on top, and golden brown on the sides and bottom.
