¾ cup cold buttermilk
2 Tbsp brown sugar or honey
1 egg
2 cups flour
1 tsp baking powder
½ tsp salt
¼ cup butter
½ cup blueberries (fresh, frozen, or dried)
sugar
cardamom
Preheat oven to 375° F.
Combine flour, baking powder, and salt, in a large bowl, stirring with a whisk. Cut in chilled butter until the mixture resembles coarse meal. Stir in the blueberries (if using frozen, bring them to room temperature and pat them dry). Add milk, brown sugar/honey, and egg, stirring just until moist.
Place dough onto a floured surface and knead lightly until the dough is all together. Place on a baking sheet that is either greased, or lined with parchment. Form dough into an approximately ¾” thick, 9” circle. Cut dough into 12 wedges all the way through.
Sprinkle cardamom and sugar on top. Bake until golden, 18-20 minutes. Serve warm.

3 egg whites
2/3 cup sugar
½ tsp vanilla extract
1/8 tsp almond extract
¼ cup corn starch
1 1/3 cup finely chopped nuts
Preheat oven to 300° F. Warm egg whites over hot water. Combine egg whites, vanilla, and almond extract, and beat until soft peaks form. Slowly pour the sugar in while beating at high speed. Beat until stiff peaks form. In another bowl, mix together corn starch and nuts. Beat into the egg whites at low speed. Drop by spoonfuls onto a greased baking sheet. They don't spread, so you can place them close together on the sheet. Bake for 30-35 minutes. Remove from pan immediately and cool on a wire rack.

3 ¾ cups milk
½ tsp salt
¾ cup sugar
¼ cup + 1 tsp cornstarch
3 egg yolks
1 ½ tsp vanilla extract
1 ½ Tbsp butter
Put 3 cups milk and the salt in a saucepan over med-high heat. Sprinkle sugar on the milk, without stirring.

¼ cup popcorn kernels
½ cup butter
¾ cup sugar
¼ cup corn syrup
½ tsp vanilla extract
Pop the kernels into plain popcorn.
Melt butter over medium heat in a saucepan. Add sugar and corn syrup. Let it simmer, stirring occasionally, for 10 minutes or less. Do not let it come to a full boil, as that will burn the caramel. It should end up a medium brown caramel color. Lighter caramel brown makes a softer caramel. As soon as it gets a reddish tint, it will create a hard caramel that tastes more like the storebought caramel popcorn. Don't let it get darker than that.
When it's done, remove from heat and add vanilla extract, stirring in well. Pour over the popped popcorn in a large bowl. Turn the popcorn gently with two spoons or rubber spatulas until it's all covered with caramel.
Eat it while it's warm, or spread it out on waxed paper for the caramel to harden.

2 cups flour
2 Tbsp sugar
2 tsp baking powder
1 tsp baking soda
½ tsp salt
¼ cup butter
1 cup buttermilk
1 Tbsp melted butter
Preheat oven to 375° F. Lightly grease a small baking sheet or dust with coarse cornmeal.
In a large bowl, sift flour, sugar, baking powder, baking soda and salt. Cut in the butter with pastry blender or fork until mixture looks like fine crumbs. Add buttermilk. Mix with a fork until dry ingredients are moistened. Turn out on a lightly floured board and knead gently until smooth, about 1 minute.
Shape into a ball. Place on the prepared baking sheet. Flatten into a 7” circle. Dough will be about 1 ½” thick. Press a large knife into the loaf, almost cutting through to the bottom, dividing it into quarters.
Bake 30-40 minutes, or until the top is golden and the loaf sounds hollow when tapped. Remove to wire rack to cool. Brush top with melted butter.

¾ cup sugar
½ tsp cinnamon
¼ tsp grated nutmeg
¼ tsp allspice
1/8 tsp salt
1 egg
4 egg whites
1 ½ cups milk
1 ½ cups half-and-half
Combine sugar with the spices in a large bowl. Add the egg and egg whites and beat on high speed for 5 minutes.
Heat 1 cup of milk, stirring constantly, until it is steaming (not boiling). Slowly mix half of that into the egg mixture. Stir the egg mixture back into the hot milk in the pan. On medium heat, cook for 5-8 minutes, stirring constantly, until it is steaming again and thickened enough to thinly coat the back of the spoon. Do not boil it.
Remove from heat and stir it frequently as it cools for 5 minutes. Stir in the remaining milk and half-and-half. Cover and chill.
