2 cups grated carrot
2 tsp fennel seeds

1 pound beet roots
½ cup apple juice, or other fruit juice
2 Tbsp olive oil
1 Tbsp minced chives
1 Tbsp minced mint
1 Tbsp minced thyme
½ tsp salt
2 cups, packed, chopped lettuce and beet greens
Scrub the beets and grate with a large-holed grater. Toss with the lettuce and greens. Combine the juice, olive oil, and salt to taste. Toss with the beets and greens.
Serves 4.

This is not a traditional Welsh laverbread recipe, but it is similar.
1 cup prepared laver, or nori sheets torn up and soaked in water until soft (drain off excess water)
¼ cup rolled oats
¼ cup corn meal or oat flour
vegetable oil
salt
pepper
malt vinegar
Stir together the laver/nori, oats, and corn meal. It should make a dough that holds together, and is not runny or extremely sticky.
Warm the oil in a pan for frying. Form the dough into thin patties about 2” across. Fry them for a few minutes on each side, until golden and crisp. Place on a wire rack over paper towels to drain off excess oil.
Serve sprinkled with salt, pepper, and vinegar.
Makes about 9 patties.
Where I live, it's a lot easier to find nori, seaweed that has been toasted and rolled flat in a sheet. It is the same species of the seaweed used in Wales, but it's been prepared differently. As stated in the recipe, you can just soak it in water to soften (only takes a minute or so) for good results.

about 5” of cucumber
1 cup plain Greek yogurt
2 cloves garlic, minced
1 Tbsp chopped fresh mint leaves
½ tsp ground black pepper
Cut the cucumber in half lengthwise and remove the seeds. Grate the cucumber into a bowl. Stir in all the other ingredients.
It gets better as the flavors combine over time (like 30 minutes), but you can use it immediately.

Preheat the oven to 375° F.
Wash the kale. Cut off the stems and cut the ribs out of the leaves. Cut the leaves into wide strips.
Pour some oil onto a baking sheet (a few tablespoons should suffice, although it depends on how much kale you have). Put the kale strips on the baking sheet, spreading them around and coating them with the oil. Sprinkle with salt and pepper. Try to have them spread out evenly and not overlapping a lot.
Bake for 3-8 minutes, until they are light and crispy. The time on this varies depending on how much you've made, so just check it after a few minutes.

2 mangos
1 pineapple
½ cup red onion, chopped
½ cup celery, chopped
1 small red bell pepper
1-3 jalapeño peppers
¼ cup fresh cilantro, chopped
¼ cup lime juice
Cut the peels off the mangos, discard the peels, and cut as much flesh as you can off the pits.
Cut the top and bottom off the pineapple, cut it into long quarters, and cut the hard core out of each piece.
Cut the top off the jalapeños, cut them open lengthwise, and remove and discard the seeds.
Do the same with the red bell pepper.
Chop all the ingredients as finely as possible, especially mincing the jalapeños very fine.
Combine all ingredients.

Preheat oven to 350° F.
Have corn on the cob that is still inside the husk. Put it in the oven, straight on the oven rack, and cook for 30 minutes.
It comes out very sweet, tender and flavorful, a different taste than when the corn is boiled. Leaving the husk on while it's roasting traps in the moisture.

2 ¾ cup flour
4 tsp baking powder
1 tsp salt
3 Tbsp Olive oil
3 Tbsp Coconut oil or butter
1 ½ cup milk
Preheat oven to 450° F.
Stir the flour, baking powder and salt together. Cut in the butter, or grate it & stir it in. Stir in the milk. For whole wheat flour, you might need 1 or 2 more Tbsp of milk. It should be a very soft, sticky dough. Drop by large spoonfuls onto a greased or lined baking sheet. Bake for 12 minutes. Makes 12.
Variations:
Reduce the salt to ½ tsp. Add a bit of honey or sugar, and other things like nuts, oats, and dried fruit to make scones.
Use olive oil instead of butter. Add 1 tsp rosemary and 1 tsp black pepper and roll out into thin pizza crusts (recipe is enough for 2 medium-large pizzas). It makes a nice crackery crust.
Make vegan by using coconut oil instead of butter and water instead of milk. The biscuits still turn out soft and fluffy.
Add ¾ cup of grated cheese.

This is how my mom makes stuffing for Thanksgiving.
Ingredients:
cornbread
bread
onions
celery
butter
sage
soup stock
salt
Make a batch of cornbread. Cut into cubes after it's baked.
Gather different kinds of bread and rolls you have around. Stale bread is okay. Tear or cut the bread into cubes. Have an equal amount of cornbread and other bread.
Mix the cornbread and the other bread together in large bowl.
Saute chopped onions and chopped celery in butter.
Mix onions and celery into the breads.
Add a lot of ground sage to taste.
Add chicken/turkey broth or vegetable stock. Add enough to moisten the bread, especially if some is stale, but not so much that it turns into a gluey, soggy lump.
Add salt if the stock/broth you used was not salty.
At this point taste it and add more sage/salt/broth as necessary.
Spread it into a baking pan and warm it in the oven until it's warm all the way.

A sweet potato or yam
olive oil

Set the oven to 450° F.
Wash the sweet potato and make sure you dry it very well.
Cut the sweet potato into sticks and put them in a large bowl. Sprinkle salt and pepper onto them, tossing them to mix. Then add a small amount of olive oil, just enough to make them seem moist, tossing them to coat.
Pour them onto a baking sheet, drizzling any oil mixture that got to the bottom of the bowl.
Space the fries out so they are not touching (this will make them more crispy) and bake for 15 minutes, flip them, and bake for 10 more minutes.
Cook them just a few minutes less on each side if you want them less dark and crispy.
