Wheat and Honey

Cobbler

This basic recipe can be used as the template for many variations of the classic dessert.

For a medium sized cobbler, about 9”×6”.

Filling: 3 cups fruit, fresh or frozen about ¼ cup sugar (more or less depending on the fruit used)

Topping: 1 cup flour 1 ½ cups rolled oats ¼ cup sugar 1/3 cup butter

Preheat oven to 375° F.

Prepare the fruit as necessary, such as washing, peeling, chopping it into roughly bite-sized pieces, removing seeds. Stir the fruit and sugar together, then spread into the bottom of a baking pan.

Stir the oats, flour, and sugar together. Use your fingers to rub in the butter until there is no dry powder. Sprinkle the topping over the fruit and bake for 30 minutes.

Variations

Use rolled barley, rye, or wheat instead of rolled oats. Use white sugar, brown sugar, honey, or maple syrup. Combine any type of fruit. Add 1-2 tsp of spices to the filling or the topping. Add extras to the filling like chopped nuts, dried fruit, shredded coconut, or chocolate chips. Use coconut oil instead of butter. Use different types of flour in the topping such as almond flour, corn meal or masa harina.

1 ½ lbs rhubarb, chopped into ½ in pieces ¼ cup honey 1 Tbsp butter 1 Tbsp cornstarch

For the crumble topping: 1 ½ cup flour 6 Tbsp butter, cold and diced 3 Tbsp brown sugar

Preheat the oven to 375° F.

Heat the rhubarb in a pan on medium to medium low with the honey, 1 Tbsp butter, and cornstarch for about 5 minutes, until the rhubarb is glossy and everything has melted together. Transfer to an 8 ½” pie tin or square baking dish.

To make the crumble topping, place the flour and brown sugar in a bowl and rub in the butter until it is thoroughly combined, with a texture like soft crumbs.

Spread evenly over the fruit. Bake 35-45 minutes.

4 cups peaches, sliced thin and pit removed 1 ½ Tbsp sugar 1 tsp ground ginger 1 Tbsp unflavored gelatin or collagen 1 ½ cup flour 1 ½ cup corn meal or masa harina ½ cup sugar 2 tsp baking powder pinch of salt ¼ cup butter ½ cup cream or half & half 2 eggs

Preheat oven to 350° F. Grease an 8” square or circular cake pan.

In a medium bowl, stir together the peaches, 1 ½ Tbsp sugar, gelatin, and ground ginger. If the fruit is frozen, it needs to be thawed.

In a large bowl, stir together the flour, corn meal, sugar, baking powder, and salt. Cut the butter into small cubes, then cut it into the flour mixture until the butter is all small pieces. Stir in the eggs and cream to make a thick, clumpy dough. Add more liquid if necessary, so there is no loose powder in the dough.

Put ½ of the crumb mixture into the bottom on the cake pan, in an even layer. Put the peach mixture in an even layer over the crumbs. Top with a layer of the remaining crumb mixture, sprinkling it in large clumps.

Bake for 30-40 minutes, until lightly golden on top.

Crust: 1 cup flour 6 Tbsp butter ¼ cup water

Filling: 2 lbs. apples ½ cup dried fruits (this time I used prunes, raisins, dried cherries, dried blueberries, crystallized ginger) ½ cup sugar ¼ tsp ground cinnamon ¼ tsp ground nutmeg ¼ tsp ground mace ¼ tsp salt 1/8 tsp ground cloves pinch of saffron powder (optional)

Cut the butter into the flour until it is crumbly and there are no more large chunks of butter. Stir the water into the flour. Knead it a little bit to make a dough, using flour if necessary to keep from sticking. Roll it thin and place in a 9” pie or tart dish. Chill until ready to use.

Preheat oven to 375° F. Core the apples and chop them into small pieces. Mince the dried fruits. Combine the apples and dried fruits with the spices and sugar, stirring to coat. Place into the tart crust.

Cover with aluminum foil and bake for 45 minutes, removing the foil toward the end of baking time.

Filling: 3 apples 2 tsp honey 1 lb. strawberries 1 Tbsp honey 1 Tbsp arrowroot powder pinch of salt

Topping: ¾ cup flour ¼ cup rolled oats 4 Tbsp butter 2 Tbsp sugar or brown sugar 1 tsp ground cinnamon ½ tsp poppy seeds

Preheat the oven to 350° F.

Coat bottom of an 8” cake pan with butter.

Slice apples into cubes, removing the core. Place in a small pot with 2 tsp honey and cook, covered, over medium heat, for 8-10 minutes, stirring occasionally.

Meanwhile, hull and halve the strawberries. Place them in a large bowl with the rest of the honey, arrowroot powder, and salt. Stir to coat the berries with powder.

Put the apple mixture in the cake pan, then the strawberry mixture.

In another bowl, stir together the flour, oats, sugar, cinnamon, and poppy seeds. Cut in the butter until there are no large chunks of butter and no dry flour. Sprinkle this mixture over the fruit in the pan.

Bake for 30-35 minutes, until golden.

Preheat the oven to 375° F.

Chop the pears into chunks, removing the cores. Stir together chopped pears, honey, and arrowroot in an 8” square pan.

Mix the flour, oats, and sugar in a bowl and rub in the butter until it is thoroughly combined, with a texture like soft crumbs, and no dry powder. Spread evenly over the fruit.

Bake 35-45 minutes.

5 cups of damson plums, pitted and quartered ¼ cup brown sugar ¼ cup flour

1 cup flour ¾ cup rolled oats 2 Tbsp honey ½ tsp salt ½ tsp cinnamon 1 egg, beaten ¼ cup butter, melted

Preheat oven to 375° F.

Stir together the plums, brown sugar, and flour. Pour into a 9” baking pan.

Stir together the flour, oats, salt, and cinnamon. Stir in the honey, egg, and melted butter. Crumble over the top of the fruit. Bake for 40 minutes.

Stir together the apples, plums, brown sugar, and ginger. Put in a 9” baking dish. Stir together the oats, flour, and nut flour. Cut in the honey and butter until there are no more large chunks. Sprinkle the topping over the fruit.

Bake for 30 minutes.

3 cups chopped rhubarb 2 medium apples, cored and chopped ½ cup maple syrup ¼ tsp ground nutmeg 1 cup flour 2 Tbsp brown sugar pinch of salt ¼ cup butter

Preheat oven to 350° F.

Combine the rhubarb, apple, maple syrup and nutmeg. Pour into a 8” baking pan or pie tin.

Stir together the flour, brown sugar, and salt. Cut in the butter until it is all crumby. Sprinkle evenly over the fruit.

Bake for 45-55 minutes.

Filling:

5 ½ to 6 cups cored, diced pears 1 ½ Tbsp cornstarch 1/8 tsp salt ¼ cup maple syrup 1 Tbsp lemon juice 1 tsp finely grated lemon zest 2 Tbsp minced candied ginger or ½ tsp ground ginger

Topping:

2/3 cup flour ¾ cup rolled oats ¼ cup packed brown sugar ¼ tsp salt 6 Tbsp cold butter

Heat the oven to 400°. Place the diced pears in a large bowl, sprinkle the cornstarch over them, and stir well. Add the remaining filling ingredients and toss gently, until the mixture is evenly combined.

Put the filling into deep-dish pie tin and smooth the top of the fruit. Bake for 45 minutes.

While it's baking, make the topping. Combine the flour, oats, brown sugar, and salt in a large mixing bowl. Cut in the butter until you have large crumbs. Refrigerate the topping until you are ready to use it.

Lower the oven temperature to 375°. Remove the fruit from the oven and carefully pour the crumbs in the center of the pan, then spread them evenly. Return the crumble to the oven and bake for 15 minutes.
