Wheat and Honey

ginger

Period: England, 1300s-1400s Sources: Medieval Cookery

Crust: 1 cup semola flour 1 Tbsp sugar 1 tiny pinch of saffron 1/8 tsp salt 6 Tbsp butter ¼ cup water

Filling: 6 egg yolks 1 Tbsp water ½ tsp gelatin ¼ cup sugar ½ tsp powdered ginger ¼ cup minced dates ¼ cup minced raisins, dried currant berries, or similar

For the crust: Stir together the flour, sugar, saffron, and salt. Cut in the butter until it creates moist crumbs, leaving some small chunks of butter. Stir in the water, forming a dough. Wrap the dough in plastic wrap and chill it in the fridge while making the filling.

Preheat oven to 350° F.

Dissolve the gelatin in the water. Beat together the egg yolks, gelatin, sugar, and powdered ginger until the mixture is very light, as light as you can reasonably get it. Then stir in the dates and raisins.

Divide the crust dough into 12 pieces, 6 of them slightly smaller than the others. Roll the larger balls out into circles and line 6 cups in a mini tart pan. Put about 2 Tbsp of filling into each cup—there will be a little extra, so divide it evenly. Then roll the smaller balls of dough to make top crusts. Leave a little bit of space, if you can, between the filling and the top crust.

Bake for 35-40 minutes, until the crust is golden brown.

2 cups water 2 mint teabags 1 Tbsp ginger root ½ cup sugar 3 large peaches 1 Tbsp lemon juice ¼ tsp salt 2 liters sparkling water

Boil 2 cups water. Remove from heat. Add the tea bags and steep for 10 minutes, then discard the tea bags.

Chop the peaches and ginger root, removing peach pits. Combine all ingredients except the sparkling water, and let sit for 10 minutes. Liquefy the mixture in blender, then strain out the solids, which will basically only be bits of peach skin. Return the mixture to heat, and heat it to boiling point. Remove from heat and chill thoroughly. Mix with 2 liters of sparkling water.

4 cups peaches, sliced thin and pit removed 1 ½ Tbsp sugar 1 tsp ground ginger 1 Tbsp unflavored gelatin or collagen 1 ½ cup flour 1 ½ cup corn meal or masa harina ½ cup sugar 2 tsp baking powder pinch of salt ¼ cup butter ½ cup cream or half & half 2 eggs

Preheat oven to 350° F. Grease an 8” square or circular cake pan.

In a medium bowl, stir together the peaches, 1 ½ Tbsp sugar, gelatin, and ground ginger. If the fruit is frozen, it needs to be thawed.

In a large bowl, stir together the flour, corn meal, sugar, baking powder, and salt. Cut the butter into small cubes, then cut it into the flour mixture until the butter is all small pieces. Stir in the eggs and cream to make a thick, clumpy dough. Add more liquid if necessary, so there is no loose powder in the dough.

Put ½ of the crumb mixture into the bottom on the cake pan, in an even layer. Put the peach mixture in an even layer over the crumbs. Top with a layer of the remaining crumb mixture, sprinkling it in large clumps.

Bake for 30-40 minutes, until lightly golden on top.

2 ½ cups plain bread crumbs* ¼ cup brown sugar 4 Tbsp butter 1 lb apples ½ lb plums 1 tsp ground ginger 3 Tbsp honey 1 cup whipping cream 2 Tbsp brown sugar

Cut the butter into smaller pieces. Place breadcrumbs, butter and ¼ cup brown sugar in a non-stick pan on low heat. Cook gently while constantly stirring until the butter has all melted and it’s dark golden. Transfer into a bowl and set aside.

Core and slice the apples. Combine the apples and honey. Cook, covered, over medium heat until the apples are soft enough to easily poke through with a knife, but before they get mushy. Add the ginger. Mash the apples, or put them in a food processor on a low setting, until it is have pureed and half chunks of apple. Basically make a chunky applesauce.

Pit the plums and cut into fourths. Mash/process them in the same way.

Divide each of those ingredients into thirds.

In a glass dish, layer the ingredients. Starting at bottom: apples, plums, crumbs. Repeat to have 3 sets of layers.

Chill in the fridge until cool, even overnight.

Before serving, whip the cream with the 2 Tbsp brown sugar, and spread that over the top. Garnish with plum jam, if available.

*I made bread crumbs with a mixture of whole wheat bread and white potato bread. Basically any plain bread, biscuits, rolls, etc. will work. The easiest way to make bread crumbs is to tear up pieces of bread and process in a blender/food processor until it is all crumbs.

In the Redwall universe, this is actually made from a red-colored root with a hot flavor (seen in Outcast of Redwall). I'm not sure such a plant exists in real life, so I've blended different peppers and spicy roots to make this spice.

cayenne pepper black pepper ground ginger ground horseradish paprika

Combine equal amounts of the spices.

I added the paprika to make it a more red color. Most paprika available is sweet and not very spicy, but there are spicy kinds available, so use that if you can find it.

To make hotroot essence, mix the powder with cold water to make a thick liquid, let it sit a few minutes, then add a small amount of vinegar.

1 double batch of pie crust 1 Tbsp arrowroot powder 6 cups apples, chopped 1 tsp ground cinnamon 1 tsp ground nutmeg ¼ cup honey 1 egg, beaten ground ginger Ground cloves

Preheat oven to 350° F.

Stir together the apples, arrowroot, honey, cinnamon, and nutmeg.

Make sure the crust dough is chilled thoroughly. Divide in half and roll out each half on separate pieces of waxed paper, using flour as needed to keep them from sticking. roll to about 1/8” thick. Place one sheet of dough in a pie tin, fitting it inside and trimming the edges. Fill with the apples. Place the other sheet of dough over the top, trimming the edges and crimping the top and bottom together along the edge. Brush the beaten egg on the top crust and sprinkle with ground ginger and ground cloves. Cut slashes into the top crust.

Bake for 40-50 minutes until the crust is golden brown.

Custard: 3 ¾ cups milk ½ tsp salt 1 tiny pinch lavender buds ¼ tsp dried mint leaves 1/8 tsp dried chamomile flowers 1/3 cup honey ¼ cup + 1 tsp cornstarch 3 egg yolks 1 ½ tsp vanilla extract 1 ½ Tbsp butter

Combine 3 cups milk, salt, and honey in a saucepan over med-high heat. Grind the lavender, mint, and chamomile into powder and stir into the milk.

In a separate bowl, whisk the cornstarch into the remaining milk. Add egg yolks and mix well.

When milk comes to a boil, remove from heat and stir in the cornstarch mixture. Keep stirring as the mixture begins to thicken. Return to heat and cook for 1-2 minutes, stirring occasionally. Remove from heat and stir in butter and vanilla. It will continue to thicken as it cools.

Pears: 2 pears 1/3 cup honey ½ tsp ground ginger ½ tsp pure vanilla extract

Arrange an oven rack about 5 inches from the broiler and heat the broiler on high. Line a rimmed baking sheet with foil.

Cut the pears in half lengthwise and scoop out the core and seeds. Arrange the pear halves, cut side up, on the prepared baking sheet.

In a small bowl, stir the honey, ginger, and vanilla. Spoon evenly into each pear half.

Broil the pears, rotating the pan once, until bubbling and caramelized, about 5 minutes.
