Wheat and Honey

pepper

1 onion 1-2 Tbsp butter 2 ½ cups carrots, chopped into 1” pieces 4 eggs ½ cup half and half ½ tsp salt ¼ tsp pepper 1/8 tsp crushed mint leaves

Thinly slice the onion. Place in a pan over med-low heat with butter and cover, stirring occasionally. When the onions are soft, remove cover and continue to cook, stirring occasionally, until the onion pieces are browned.

At the same time, boil the carrot pieces in salted water, until the fat pieces of carrot are easy to stab with a fork.

Drain the carrots and puree with the half and half, making it as smooth as you can get it.

Preheat oven to 325° F.

Butter a pie tin and spread the onion evenly over the bottom.

Beat together the eggs, carrot puree, salt, pepper, and mint. Pour evenly over the onions.

Place the pie tin in a larger pan with water in it. Bake until it is a set custard, and a toothpick or knife inserted in the center comes out clean, about 60 minutes.

1 lb beef, cut into chunks, or ground ½ tsp lavender buds 8 oz sliced mushrooms 7 red potatoes of variable size 2 Tbsp cream cheese ¼ cup milk ½ tsp salt ½ tsp ground black pepper 2 beets 3 carrots 1 onion ¼ cup fennel leaves and stalks 2 Tbsp flour or corn starch

Cook the beef and mushrooms with the lavender buds in a small amount of water. Add salt and pepper to taste.

Cut potatoes into chunks and boil until soft. Drain the water; mash the potatoes with the milk, cream cheese, salt and pepper.

Chop up the vegetables and place in a casserole dish. You can use just the beet root, or use the leaves as well. Put the beef and mushrooms over the vegetables, it's okay if it's not fully cooked at this point. Sprinkle flour over everything.

Spread the mashed potatoes over everything.

Bake for about 30 minutes. Broil it at the end if necessary to brown the top.

This is not a traditional Welsh laverbread recipe, but it is similar.

1 cup prepared laver, or nori sheets torn up and soaked in water until soft (drain off excess water) ¼ cup rolled oats ¼ cup corn meal or oat flour vegetable oil salt pepper malt vinegar

Stir together the laver/nori, oats, and corn meal. It should make a dough that holds together, and is not runny or extremely sticky.

Warm the oil in a pan for frying. Form the dough into thin patties about 2” across. Fry them for a few minutes on each side, until golden and crisp. Place on a wire rack over paper towels to drain off excess oil.

Serve sprinkled with salt, pepper, and vinegar.

Makes about 9 patties.

Where I live, it's a lot easier to find nori, seaweed that has been toasted and rolled flat in a sheet. It is the same species of the seaweed used in Wales, but it's been prepared differently. As stated in the recipe, you can just soak it in water to soften (only takes a minute or so) for good results.

about 5” of cucumber 1 cup plain Greek yogurt 2 cloves garlic, minced 1 Tbsp chopped fresh mint leaves ½ tsp ground black pepper

Cut the cucumber in half lengthwise and remove the seeds. Grate the cucumber into a bowl. Stir in all the other ingredients.

It gets better as the flavors combine over time (like 30 minutes), but you can use it immediately.

1 Tbsp butter 6 eggs ½ cup milk ½ tsp ground pepper ½ cup grated cheese

Put the butter in a skillet over low heat. As it melts, beat the milk, eggs, and pepper together until mostly homogeneous. Stir in the cheese.

Increase heat to medium high. Pour the eggs into the skillet and let sit for about a minute. Gently scrape along the bottom of the skillet with the flat edge of a spatula. Let sit again for about 30 seconds, then scrape again. As it loses liquid, stir it more frequently until it is all cooked.

For larger clumps and a stronger egg flavor, reduce milk to ¼ cup.

kale oil salt pepper

Preheat the oven to 375° F.

Wash the kale. Cut off the stems and cut the ribs out of the leaves. Cut the leaves into wide strips.

Pour some oil onto a baking sheet (a few tablespoons should suffice, although it depends on how much kale you have). Put the kale strips on the baking sheet, spreading them around and coating them with the oil. Sprinkle with salt and pepper. Try to have them spread out evenly and not overlapping a lot.

Bake for 3-8 minutes, until they are light and crispy. The time on this varies depending on how much you've made, so just check it after a few minutes.

4 Tbsp butter ½ cup – 1 cup diced onions 4 lbs tomatoes, diced ¼ tsp thyme ½ tsp basil ¼ tsp black pepper 3 Tbsp flour 2 cups vegetable stock or chicken broth ¼ tsp baking soda 3 Tbsp sugar 1 ½ cups evaporated milk (12 oz can) ½ tsp salt 6-10 slices of bacon

In a large saucepan, saute the onions in the butter until tender, about 10 minutes (do not brown). Add the tomatoes, thyme, basil and pepper. Simmer 10 minutes. Whisk the broth and flour together and add to the soup mixture. Cover and simmer for 25 minutes, then remove from heat.

Fry the bacon until crispy and let cool, then crumble. Puree the soup in a blender, then return to the stove. Stir in the baking soda, sugar, milk, salt, and bacon. Heat, stirring, to a bare simmer, just to get it hot again.

Serves 3-4 people.

2 ¾ cup flour 4 tsp baking powder 1 tsp salt 3 Tbsp Olive oil 3 Tbsp Coconut oil or butter 1 ½ cup milk

Preheat oven to 450° F.

Stir the flour, baking powder and salt together. Cut in the butter, or grate it & stir it in. Stir in the milk. For whole wheat flour, you might need 1 or 2 more Tbsp of milk. It should be a very soft, sticky dough. Drop by large spoonfuls onto a greased or lined baking sheet. Bake for 12 minutes. Makes 12.

Variations:

Reduce the salt to ½ tsp. Add a bit of honey or sugar, and other things like nuts, oats, and dried fruit to make scones.

Use olive oil instead of butter. Add 1 tsp rosemary and 1 tsp black pepper and roll out into thin pizza crusts (recipe is enough for 2 medium-large pizzas). It makes a nice crackery crust.

Make vegan by using coconut oil instead of butter and water instead of milk. The biscuits still turn out soft and fluffy.

Add ¾ cup of grated cheese.
