Wheat and Honey

Pie

¾ cup flour ¾ cup rolled oats 1/3 cup cold butter ¼ cup sour cream or plain yogurt

Preheat oven to 350° F.

Stir together the flour and oats. Cut in the butter until crumbly and there's no dry powder. Stir in the sour cream/yogurt.

Sprinkle flour in the pie tin, then dump the dough in and press it evenly onto the bottom and sides. It can be baked now, or chilled for a sturdier crust.

For a half-baked crust, when the filling is to be baked for 30 minutes or less, bake the crust alone for 10 minutes. For a fully baked crust, bake alone for 15-20 minutes. If the crust does not need to be pre-baked, use the baking time for the pie filling recipe.

1 9” pie crust, baked 4 cups strawberries, sliced ½ cup sugar 3 Tbsp cornstarch or arrowroot powder ¾ cup water

Put half of strawberries in the baked pie crust.

Combine remaining berries with sugar in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently. Mash the berries.

In a small bowl, stir together cornstarch/arrowroot and water. Gradually stir cornstarch mixture into boiling strawberry mixture. Reduce heat and simmer mixture until thickened, stirring constantly. Pour mixture over berries in pastry shell.

Chill thoroughly before serving.

Crust:

½ cup flour ½ cup rolled oats ½ tsp salt ¼ cup cold butter, cubed 2 Tbsp cold water

Stir together the flour, oats, and salt. Cut in the butter until it's clumpy. Stir in the water. Put dough on a piece of plastic wrap and use the wrap to press it into a ball, then chill.

Preheat oven to 350° F.

Meanwhile, make the filling:

2 ½ cups almond flour 1 cup quince jam 2/3 cup dried or candied fruit, finely chopped 1 tsp cinnamon 2 egg yolks ½ cup sour cream

Mix all ingredients together.

When the crust is firm to the touch, place the ball of dough in a pie tin. Use the plastic wrap as a shield to roll or press out the dough to shape the crust in the pie tin. Press the filling evenly into the crust.

Bake for 30 minutes.

Crust:

Preheat oven to 400° F.

Mix flour, oats, and salt. Cut in the butter until it's crumbly. Stir in the ice water 1 Tbsp at a time, then press together into a ball. Wrap in plastic wrap and refrigerate or freeze to make it harder.

Roll out the crust between two pieces of plastic wrap or waxed paper. Press into a pie or tart pan. Prick bottom with a fork. Bake for 5 minutes, then let cool completely.

Filling:

¼ cup brown sugar 2 Tbsp flour 1 cup sour cream 1 Tbsp fruit juice 1/8 tsp ground cloves 3 cups of pears, cored and sliced thinly

Reduce oven to 350° F.

Combine flour, sugar, sour cream, fruit juice, and cloves. Mix well and spread most of it into the cooled crust, reserving about 1/3 cup. Lay pear slices over the cream, then spread the remaining cream on top. Bake for 30-40 minutes until crust is brown and cream is bubbling. Serve warm or cool.

Crust: 1 ¼ cup flour ¼ tsp salt ¼ cup cream cheese ¼ cup butter about ¼ cup cold water

Filling: 2 ½ cups seedless grapes, different varieties, stems removed 1 Tbsp butter 2 Tbsp flour 1/3 cup honey

Stir together flour and salt. Cut in cream cheese and butter until it forms fine crumbs. Sprinkle in some of the water and shake the mixture in the bowl. Remove large clumps that form and continue until it is mostly formed into large clumps. Press the clumps and the remaining crumbly dough together, forming a ball. Wrap in plastic and chill.

Preheat oven to 425° F.

Place the grapes in a pan over medium heat. Use a potato masher to gently mash the grapes and separate the skin and pulp. Let cook until it's about to simmer, and the colors change.

Meanwhile, stir together the honey, flour, and butter. Add the grapes when done, stirring until the butter is melted.

Roll out the crust onto a piece of plastic wrap, waxed paper, or thin cloth. Roll into a thin circle and place into a pie tin. Cut off excess around the edges. Pour the grape filling in. The filling bubbles and expands while baking. Leave some room for it so it doesn't overflow and burn. Use extra pie crust to create a crumbled topping.

Bake for 25 minutes (or until the crust is done).

Crust: 1 cup flour 3 Tbsp powdered sugar ¼ cup butter ¼ cup yogurt

Filling: 1 cup (8 oz) cream cheese 2 Tbsp honey 1 large egg

Topping: 2-4 apples, cored and cut into ¼” slices 1/8 tsp cardamom 1/8 tsp allspice 2 Tbsp honey

Preheat oven to 450° F. Grease 9” pie pan.

Crust: Stir together flour and sugar. Cut in butter and yogurt until the dough forms. Press the dough onto the bottom and one inch up the sides of the pan.

Filling: Beat the cream cheese until smooth. Add the honey and mix well. Blend in the egg. Pour the filling into the crust.

Topping: Toss the ingredients together, to coat the apple slices. Place apple slices in a decorative fashion on the top of the tart. You want it to be about double layered with apple slices.

Bake 10 minutes. Reduce heat to 400° F and bake for 25-30 minutes or until golden brown (apples are soft when pierced with a fork), and filling is almost set. Remove from oven and let cool before serving.

Preheat oven to 350º F. Prepare the pie crust in the baking tin. Line the bottom of the crust with a layer of sliced almonds.

Mix arrowroot and spices in large mixing bowl. Stir in cherries and honey. Pour into the pie crust. Cover with the top crust.

Bake for 35-40 minutes or until crust is brown and juice begins to bubble.
